Stonky rovn\u011b\u017e nakr\u00e1j\u00edme na kousky. Pomeran\u010d umyjeme horkou vodou a osu\u0161\u00edme. Slupku odd\u011bl\u00edme pomoc\u00ed \u0161krabky a spolu s \u0159epkov\u00fdm olejem a stonky estragonu zah\u0159ejeme asi na 80 \u00b0C, pak d\u00e1me znovu vychladit. Pozd\u011bji propas\u00edrujeme p\u0159es s\u00edto a sm\u00edch\u00e1me s\u00a0listy estragonu.<\/p>\n<p><strong>Kan\u010d\u00ed rag\u00fa:<\/strong>\u00a0P\u0159edeh\u0159ejme troubu na 120 \u00b0C (horkovzdu\u0161n\u00e1). Oloupeme \u0161alotku. Mrkev omyjeme, o\u010dist\u00edme a v\u00a0p\u0159\u00edpad\u011b pot\u0159eby o\u0161kr\u00e1beme. Maso nakr\u00e1j\u00edme na 4 cm velk\u00e9 kostky a orestujeme na \u0159epkov\u00e9m oleji, vyjmeme z p\u00e1nve, osol\u00edme a opep\u0159\u00edme. \u0160alotku a mrkev d\u00e1me do oleje na sma\u017een\u00ed, orestujeme, zasypeme cukrem a nech\u00e1me zkaramelizovat. P\u0159id\u00e1me rajsk\u00fd protlak a sma\u017e\u00edme za st\u00e1l\u00e9ho m\u00edch\u00e1n\u00ed. Podlijeme trochou \u010derven\u00e9ho v\u00edna a nech\u00e1me pova\u0159it. Proces 3 a\u017e 4kr\u00e1t opakujeme, dokud se v\u00edno nespot\u0159ebuje. Z\u00e1klad dolijeme zv\u011b\u0159inov\u00fdm v\u00fdvarem, p\u0159ivedeme k\u00a0varu a zahust\u00edme \u0161krobem rozm\u00edchan\u00fdm ve vod\u011b. Ko\u0159en\u00ed d\u00e1me do s\u00e1\u010dku nebo do \u010dajov\u00e9ho s\u00e1\u010dku, uzav\u0159eme a s\u00a0masem vlo\u017e\u00edme do om\u00e1\u010dky. V\u0161echno je\u0161t\u011b jednou kr\u00e1tce pova\u0159\u00edme, pak v\u00a0troub\u011b dus\u00edme p\u0159ikryt\u00e9 do m\u011bkka 2 a\u017e 3 hodiny.<\/p>\n<p><strong>Smr\u017ei:<\/strong>\u00a0O\u010dist\u00edme smr\u017ee, p\u0159i tom odstran\u00edme t\u0159e\u0148 houby, rozp\u016fl\u00edme a opl\u00e1chneme pod tekouc\u00ed vodou a ihned pot\u00e9 vysu\u0161\u00edme kuchy\u0148skou pap\u00edrovou ut\u011brkou. P\u0159\u00edpadn\u011b m\u016f\u017eeme pou\u017e\u00edt 10 g su\u0161en\u00fdch smr\u017e\u016f. Ty namo\u010d\u00edme do vla\u017en\u00e9 vody, rozp\u016fl\u00edme a znovu opl\u00e1chneme a osu\u0161\u00edme. Smr\u017ee m\u00edch\u00e1me a sma\u017e\u00edme v \u0159epkov\u00e9m oleji po dobu asi 2 minut, osol\u00edme.<\/p>\n<p>Serv\u00edrov\u00e1n\u00ed: Rag\u00fa dochut\u00edme octem, sol\u00ed a tak\u00e9 pep\u0159em a pod\u00e1v\u00e1me se smr\u017ei i estragon-pomeran\u010dov\u00fdm olejem. Oboje p\u0159id\u00e1me k brambor\u00e1m. K tomu p\u0159im\u00edch\u00e1me zb\u00fdvaj\u00edc\u00ed ocet, s\u016fl, pep\u0159 a za studena lisovan\u00fd \u0159epkov\u00fd olej. Dochut\u00edme.
