Zasypeme cukrem, nech\u00e1me zkaramelizovat, pak podlijeme v\u00fdvarem a p\u0159ikryt\u00e9 va\u0159\u00edme na m\u00edrn\u00e9m ohni po dobu 15 min. Pot\u00e9 ud\u011bl\u00e1me jemnou ka\u0161i p\u0159epas\u00edrov\u00e1n\u00edm p\u0159es s\u00edto, dochut\u00edme sol\u00ed a citr\u00f3novou \u0161\u0165\u00e1vou. \u0160leha\u010dku vm\u00edch\u00e1me do uva\u0159en\u00e9 om\u00e1\u010dky.<\/p>\n<p><strong>\u00a0Rizoto:<\/strong>\u00a0Odd\u011bl\u00edme petr\u017eele od stonk\u016f, omyjeme, vy\u017ed\u00edm\u00e1me do sucha a osma\u017e\u00edme do k\u0159upava po\u00a0mal\u00fdch mno\u017estv\u00edch v 175 \u00b0C hork\u00e9m \u0159epkov\u00e9m oleji asi 30 sekund, nech\u00e1me okapat na pap\u00edrov\u00e9 kuchy\u0148sk\u00e9 ut\u011brce. N\u011bkolik sn\u00edtek si odlo\u017e\u00edme stranou na ozdobu, zbytek rozma\u010dk\u00e1me s m\u00e1slem a trochou soli, vychlad\u00edme.<\/p>\n<p>V\u00fdvar pova\u0159\u00edme. \u0160alotku oloupeme, jemn\u011b nasek\u00e1me, orestujeme na \u0159epkov\u00e9m oleji. P\u0159id\u00e1me r\u00fd\u017ei a za st\u00e1l\u00e9ho m\u00edch\u00e1n\u00ed osmahneme. Podlijeme v\u00ednem, nech\u00e1me trochu pova\u0159it. Podlijeme hork\u00fdm v\u00fdvarem tak, aby byla r\u00fd\u017ee potopena. Jakmile se v\u00fdvar ji\u017e t\u00e9m\u011b\u0159 vyva\u0159\u00ed, p\u0159id\u00e1me op\u011bt nov\u00fd. T\u00edmto zp\u016fsobem va\u0159\u00edme rizoto za ob\u010dasn\u00e9ho m\u00edch\u00e1n\u00ed asi 20 minut, tak\u017ee r\u00fd\u017ee je dova\u0159en\u00e1 a je\u0161t\u011b lehce tekut\u00e1. Nastrouh\u00e1me s\u00fdr, s petr\u017eelov\u00fdm m\u00e1slem p\u0159id\u00e1me do rizota a dochut\u00edme.<\/p>\n<p><strong>Filet z cand\u00e1ta:<\/strong>\u00a0Rybu opl\u00e1chneme studenou vodou, osu\u0161\u00edme a osol\u00edme. Slaninu bez tuku \u0161kva\u0159\u00edme na p\u00e1nvi do k\u0159upava, vyjmeme ji a udr\u017eujeme v teple. Rozeh\u0159ejeme na p\u00e1nvi \u0159epkov\u00fd olej, p\u0159id\u00e1me cand\u00e1ta, 4 a\u017e 5 min. sma\u017e\u00edme, jednou oto\u010d\u00edme. Oboje p\u0159id\u00e1me k brambor\u00e1m. K tomu p\u0159im\u00edch\u00e1me zb\u00fdvaj\u00edc\u00ed ocet, s\u016fl, pep\u0159 a za studena lisovan\u00fd \u0159epkov\u00fd olej. Dochut\u00edme.
