Autorka Mark\u00e9ta Duchanov\u00e1, jak se na webu uv\u00e1d\u00ed, se specializuje\u00a0na pokojov\u00e9 kv\u011btiny, dekorace a zahradu a r\u00e1da sleduje nejnov\u011bj\u0161\u00ed trendy ze sv\u011bta \u017een.<\/p>\n\n\n\n<p>Podle autorky je mnoho teori\u00ed o potravin\u00e1ch zalo\u017eeno na neznalosti, mezi n\u011b pat\u0159\u00ed i s\u00e1dlo. Lid\u00e9 \u00fadajn\u011b ignoruj\u00ed v\u0161echny v\u00fdhody, kter\u00e9 plynou z konzumace tohoto produktu. Proto za\u010dali pou\u017e\u00edvat m\u00edsto s\u00e1dla pouze rostlinn\u00e9 oleje jako slune\u010dnicov\u00fd, \u0159epkov\u00fd a olivov\u00fd. O tom, kde jsou p\u0159\u00edpadn\u00e9 neznalosti, si \u010dten\u00e1\u0159 ud\u011bl\u00e1 obr\u00e1zek s\u00e1m.<\/p>\n\n\n\n<p><strong>Oxidace olej\u016f<\/strong><\/p>\n\n\n\n<p>Rostlinn\u00e9 tuky nejsou \u00fadajn\u011b tak dobr\u00e9, jak tvrd\u00ed v\u00fdrobce, uv\u00e1d\u00ed se v \u010dl\u00e1nku:&nbsp;<em>\u201eV&nbsp;rostlinn\u00fdch olej\u00edch jsou nenasycen\u00e9 mastn\u00e9 kyseliny, kter\u00e9 rychl\u00e9 oxiduj\u00ed. Nav\u00edc jsou n\u00e1chyln\u00e9 ke \u017eloutnut\u00ed.\u201c<\/em>Autorka m\u011bla z\u0159ejm\u011b na mysli \u017eluknut\u00ed. Toto sd\u011blen\u00ed trochu p\u0159ipom\u00edn\u00e1 sc\u00e9nku z \u010cern\u00fdch baron\u016f: ot\u00e1zka: \u201eCo ud\u011bl\u00e1 n\u00e1\u0161 dob\u0159e zn\u00e1m\u00fd samopal vzor 24, kdy\u017e ho ponech\u00e1me na v\u011btru a de\u0161ti? No?\u201c, odpov\u011b\u010f: \u201eZrezav\u00ed, ne vole?\u201c, z\u00e1v\u011br: \u201eZrezav\u00ed, spr\u00e1vn\u011b. A co hlavn\u011b? No koroduje, vy tupci!\u201cS\u00e1dlo m\u00e1 dobrou tepelnou stabilitu p\u0159i sma\u017een\u00ed. Sma\u017eit se d\u00e1 i na rostlinn\u00fdch olej\u00edch, p\u0159\u00edpadn\u00e9 oxidace nejsou p\u0159i spr\u00e1vn\u00e9m uchov\u00e1v\u00e1n\u00ed \u010di jednor\u00e1zov\u00e9m sma\u017een\u00ed v dom\u00e1cnosti natolik v\u00fdznamn\u00e9, aby p\u0159edstavovaly n\u011bjak\u00fd probl\u00e9m.<\/p>\n\n\n\n<p><strong>Dal\u0161\u00ed v\u00fd\u017eivov\u00e9 p\u0159ednosti s\u00e1dla<\/strong><\/p>\n\n\n\n<p>Krom\u011b toho s\u00e1dlo podle \u010dl\u00e1nku \u00fadajn\u011b zlep\u0161uje fungov\u00e1n\u00ed imunitn\u00edho syst\u00e9mu a stimuluje pr\u00e1ci nervov\u00e9ho syst\u00e9mu. Krom\u011b toho je s\u00e1dlo pln\u00e9 antioxidant\u016f.\u201c<\/em>N\u011bkter\u00e9 z t\u011bchto \u017eivin lze z\u00edskat z \u017eivo\u010di\u0161n\u00fdch tuk\u016f. Nap\u0159\u00edklad ryby jsou dobr\u00fdm zdrojem omega-3 mastn\u00fdch kyselin. Nen\u00ed v\u0161ak jasn\u00e9, pro\u010d se o nich hovo\u0159\u00ed v \u010dl\u00e1nku o s\u00e1dle. Americk\u00e1\u00a0<a href=\"https:\/\/fdc.nal.usda.gov\/\">datab\u00e1ze potravin USDA<\/a> pat\u0159\u00ed mezi zlat\u00e9 standardy, pokud chceme dohledat v\u00fd\u017eivov\u00e9 \u00fadaje pro jednotliv\u00e9 potraviny. Co najdeme u polo\u017eky\u00a0<a href=\"https:\/\/fdc.nal.usda.gov\/fdc-app.html#\/food-details\/171401\/nutrients\">s\u00e1dlo<\/a> v t\u00e9to datab\u00e1zi? Obsahy jednotliv\u00fdch, v\u00fd\u0161e zm\u00edn\u011bn\u00fdch minoritn\u00edch \u017eivin jsou n\u00e1sleduj\u00edc\u00ed: kyselina linolenov\u00e1 (omega-3) 1 g\/100 g, vitamin A 0 \u03bcg\/100 g, vitamin D 2,5 \u03bcg\/100 g, vitamin E 0,6 mg\/100 g a vitamin K 0 \u03bcg\/100 g. S\u00e1dlo rozhodn\u011b nen\u00ed zdrojem omega-3 mastn\u00fdch kyselin, ani vitamin\u016f nebo antioxidant\u016f. Rostlinn\u00e9 oleje obsahuj\u00ed v\u00edce antioxidant\u016f a dokonce existuj\u00ed i\u00a0<a>studie<\/a>, kdy se nap\u0159. antioxidanty z olivov\u00e9ho oleje p\u0159id\u00e1valy do s\u00e1dla za \u00fa\u010delem zv\u00fd\u0161en\u00ed jeho oxida\u010dn\u00ed stability.<\/p>\n\n\n\n<p><strong>S\u00e1dlo obsahuje mastn\u00e9 kyseliny, kdo by to \u0159ekl<\/strong><\/p>\n\n\n\n<p>Dal\u0161\u00ed skv\u011blou my\u0161lenkou je n\u00e1vod, jak si vyb\u00edrat s\u00e1dlo:&nbsp;<em>\u201eJestli se rozhodnete pou\u017e\u00edvat s\u00e1dlo, vyberte takov\u00e9 v\u00fdrobky, kter\u00e9 nebudou pln\u00e9 zbyte\u010dn\u00fdch p\u0159\u00edsad. Stoj\u00ed za to vybrat si s\u00e1dlo u dom\u00e1c\u00edch farm\u00e1\u0159\u016f, proto\u017ee \u0161patn\u00e1 kvalita m\u016f\u017ee m\u00edt na va\u0161e zdrav\u00ed vliv.\u201c<\/em>S\u00e1dlo je stoprocentn\u00ed tuk, \u017e\u00e1dn\u00e9 p\u0159\u00edsady se do n\u011bj b\u011b\u017en\u011b nep\u0159id\u00e1vaj\u00ed. Pobav\u00ed i informace:&nbsp;<em>\u201eMastn\u00e9 kyseliny maj\u00ed v&nbsp;s\u00e1dle siln\u00e9 zastoupen\u00ed, kyseliny olejov\u00e9 ho v&nbsp;n\u011bm najdete a\u017e 48 %, nasycen\u00fdch mastn\u00fdch kyselin kolem 40 %, obsahuje tak\u00e9 kyselinu palmitovou, kter\u00e9 je asi 25 %.\u201c<\/em>Mastn\u00e9 kyseliny jsou z\u00e1kladn\u00ed stavebn\u00ed jednotkou tuk\u016f obecn\u011b, proto v nich maj\u00ed v\u00fdznamn\u00e9 zastoupen\u00ed. To by asi nikdo l\u00e9pe nevymyslel.<\/p>\n\n\n\n<p><strong>Co \u0159\u00edci z\u00e1v\u011brem<\/strong><\/p>\n\n\n\n<p>\u010cl\u00e1nek je prolo\u017een spoustou reklam.
