Vym\u00fd\u0161l\u00ed se r\u016fzn\u00e9 v\u011bci, pro\u010d by n\u00e1m konzumace \u0159epkov\u00e9ho oleje m\u011bla vadit. Pokud se v\u0161e uv\u00e1d\u00ed na pravou m\u00edru, naz\u00fdv\u00e1 se to vytv\u00e1\u0159en\u00edm nov\u00fdch m\u00fdt\u016f.<\/p>\n\n\n\n<p>Takto reaguje nap\u0159\u00edklad i \u010dl\u00e1nek na internetu:<\/p>\n\n\n\n<p><a href=\"http:\/\/www.vyvazenezdravi.cz\/drsna-pravda-o-repkovem-oleji\">http:\/\/www.vyvazenezdravi.cz\/drsna-pravda-o-repkovem-oleji<\/a><\/p>\n\n\n\n<p>\u0158ada m\u00fdt\u016f byla vysv\u011btlena. P\u0159edstavuj\u00ed se v\u0161ak nov\u00e9 zd\u00e1nliv\u00e9 probl\u00e9my.&nbsp;<\/p>\n\n\n\n<p><strong>N\u011bkte\u0159\u00ed aktivist\u00e9 se sna\u017e\u00ed d\u00e9monizovat omega 6 mastn\u00e9 kyseliny. Operuje se s jejich proz\u00e1n\u011btliv\u00fdmi \u00fa\u010dinky, nevhodn\u00fdmi pom\u011bry omega 3 a omega 6 mastn\u00fdmi kyselinami apod. Jak se uv\u00e1d\u00ed v \u010dl\u00e1nku: \u201e\u0158epkov\u00fd olej sice obsahuje&nbsp;<\/strong><strong>p\u0159\u00edzniv\u011bj\u0161\u00ed pom\u011br Omega-6 ku Omega-3&nbsp;mastn\u00fdm kyselin\u00e1m (20:9), ne\u017e nap\u0159\u00edklad sojov\u00fd (51:7) nebo slune\u010dnicov\u00fd\/kuku\u0159i\u010dn\u00fd (pouze Omega-6), ale i tak pokl\u00e1d\u00e1m argumentaci o prosp\u011b\u0161nosti konzumace hojiv\u00fdch Omega-3 mastn\u00fdch kyselin v \u0159epkov\u00e9m oleji bez zm\u00ednky o tom, \u017ee do t\u011bla z\u00e1rove\u0148 dostanete dvojn\u00e1sobn\u00e9 mno\u017estv\u00ed z\u00e1n\u011btliv\u00fdch Omega-6, jako \u010dirou demagogii.\u201c<\/strong><\/p>\n\n\n\n<p><strong>Podle autora \u010dl\u00e1nku: \u201ePostup rafinace<\/strong> rostlinn\u00fdch olej\u016f je alespo\u0148 v prvn\u00ed f\u00e1zi hodn\u011b\u00a0<strong>podobn\u00fd v\u00fdrob\u011b margar\u00ednu<\/strong>&#8211; \u00fapravy za vysok\u00fdch teplot, vysok\u00e9ho tlaku, rozpou\u0161t\u011bdla na b\u00e1zi hexanu, b\u011blen\u00ed, deodorizace, atp. Nem\u011blo by v\u00e1s tedy p\u0159ekvapit, \u017ee i p\u0159i rafinaci tohoto \u201ctekut\u00e9ho zlata\u201d\u00a0<strong>doch\u00e1z\u00ed k tvorb\u011b trans-tuk\u016f<\/strong>, podobn\u011b jako p\u0159i v\u00fdrob\u011b margar\u00edn\u016f. A \u0159epkov\u00fd olej je t\u011bmito rezidui proslaven\u00fd. I kdy\u017e maj\u00ed za velkou lou\u017e\u00ed p\u0159esn\u011b stanoven\u00e1 pravidla na maxim\u00e1ln\u00ed obsah trans-tuk\u016f v produktech ur\u010den\u00fdch na p\u0159\u00edmou spot\u0159ebu, ukazuje se, \u017ee deklarace n\u011b\u010deho na pap\u00ed\u0159e a realita se mohou velmi li\u0161it.\u00a0<strong>Podle posledn\u00edch test\u016f\u00a0<\/strong>prov\u00e1d\u011bn\u00fdch na University of Florida v Gainesville na velk\u00e9m vzorku v Kanad\u011b dostupn\u00fdch a komer\u010dn\u011b nab\u00edzen\u00fdch rafinovan\u00fdch \u0159epkov\u00fdch olej\u016f v\u0161echny\u00a0<strong>vzorky vykazovaly v\u00fdrazn\u00e9 p\u0159ekro\u010den\u00edpovolen\u00e9 hladiny<\/strong> 0,2 % hmotnostn\u00edho pod\u00edlu trans-tuk\u016f.\u00a0Nadpolovi\u010dn\u00ed v\u011bt\u0161ina vzork\u016f p\u0159ekro\u010dila hladinu\u00a010kr\u00e1t a rekordmanem byl \u0159epkov\u00fd olej s pod\u00edlem 4,6 % t\u00e9to prokazateln\u011b rakovinotvorn\u00e9 l\u00e1tky!\u201c<\/p>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p><strong><em>\u010cl\u00e1nek okomentoval doc. Ing. Ji\u0159\u00ed Br\u00e1t, CSc.<\/em><\/strong><\/p>\n\n\n\n<p style=\"color:#3b861e\" class=\"has-text-color\">Negativn\u00ed \u00fa\u010dinky proz\u00e1n\u011btliv\u00e9ho p\u016fsoben\u00ed omega 6 mastn\u00fdch kyselin pat\u0159\u00ed k \u010dasto \u0161\u00ed\u0159en\u00fdm m\u00fdt\u016fm. Existuj\u00ed studie dokumentuj\u00edc\u00ed negativn\u00ed dopady vysok\u00e9 konzumace omega 6 mastn\u00fdch kyselin v testech na hlodavc\u00edch nefyziologicky p\u0159ekrmovan\u00fdch tukem s v\u00fdhradn\u00edm zastoupen\u00edm omega 6 mastn\u00fdch kyselin. Podobn\u00e9 v\u00fdsledky ukazuj\u00ed i testy\u00a0<em>in vitro\u00a0<\/em>na tk\u00e1\u0148ov\u00fdch kultur\u00e1ch. U lid\u00ed podobn\u00e9 studie chyb\u00ed, naopak jsou k dispozici studie, kter\u00e9 tyto teorie p\u0159i b\u011b\u017en\u00e9 konzumaci omega 6 mastn\u00fdch kyselin vyvracej\u00ed. \u017d\u00e1dn\u00e1 etick\u00e1 komise by nepovolila protokol studie, kde by chyb\u011bl p\u0159\u00edsun n\u011bkter\u00e9 s d\u016fle\u017eit\u00fdch \u017eivin (nap\u0159. omega 3 mastn\u00fdch kyselin). Omega 6 mastn\u00e9 kyseliny pat\u0159\u00ed rovn\u011b\u017e mezi esenci\u00e1ln\u00ed a lidsk\u00fd organismus se bez nich neobejde. Podle posledn\u00edch doporu\u010den\u00ed Sv\u011btov\u00e9 zdravotnick\u00e9 organizace je doporu\u010den\u00fd p\u0159\u00edjem pro omega 3 mastn\u00e9 kyseliny zhruba 1-4 g a pro omega 6 mastn\u00e9 kyseliny 5-18 g. Doporu\u010dovan\u00fd p\u0159\u00edjem pro omega 6 mastn\u00e9 kyseliny je vy\u0161\u0161\u00ed ne\u017e pro omega 3 a sou\u010dasn\u00fd p\u0159\u00edjem omega 6 mastn\u00fdch kyselin v \u010cesk\u00e9 republice t\u011bmto doporu\u010den\u00edm odpov\u00edd\u00e1. Nem\u00e1me probl\u00e9m s vysok\u00fdm p\u0159\u00edjmem omega 6 mastn\u00fdch kyselin, ale s n\u00edzk\u00fdm p\u0159\u00edjmem omega 3 mastn\u00fdch kyselin. Sledovat pom\u011bry omega 3 a omega 6 mastn\u00fdch kyselin pova\u017euje WHO za p\u0159ekonanou z\u00e1le\u017eitost. Ob\u011b skupiny esenci\u00e1ln\u00edch mastn\u00fdch kyselin by m\u011bly b\u00fdt konzumov\u00e1ny ve v\u00fd\u0161e uveden\u00fdch mno\u017estv\u00edch v r\u00e1mci celkov\u00e9 stravy. V\u016fbec nejhor\u0161\u00ed je porovn\u00e1vat z hlediska r\u016fzn\u00fdch pom\u011br\u016f jednotliv\u00e9 tuky a oleje, co\u017e se \u010dasto d\u011bje, ale nic to ne\u0159\u00edk\u00e1 o jejich celkov\u00e9m p\u0159\u00edjmu v r\u00e1mci celkov\u00e9 stravy. \u0158epkov\u00fd olej p\u0159isp\u00edv\u00e1 k vyv\u00e1\u017een\u00e9mu p\u0159\u00edjmu obou skupin esenci\u00e1ln\u00edch mastn\u00fdch kyselin. B\u011b\u017en\u00e1 konzumace \u0159epkov\u00e9ho oleje (cca 20 g denn\u011b) d\u00edky jeho univers\u00e1ln\u00edmu pou\u017eit\u00ed p\u0159i p\u0159\u00edprav\u011b r\u016fzn\u00fdch pokrm\u016f v dom\u00e1cnosti dod\u00e1v\u00e1 po\u017eadovan\u00e9 mno\u017estv\u00ed, jak omega 3, tak i omega 6 mastn\u00fdch kyselin v souladu s v\u00fd\u017eivov\u00fdmi doporu\u010den\u00edm renomovan\u00fdch odborn\u00fdch spole\u010dnost\u00ed.<\/p>\n\n\n\n<p style=\"color:#3b861e\" class=\"has-text-color\"><strong>V \u010dl\u00e1nku jsou z\u00e1sadn\u00ed pochyben\u00ed z pohledu technologick\u00fdch proces\u016f i znalost\u00ed legislativy. Pou\u017e\u00edv\u00e1n\u00ed hexanu nen\u00ed sou\u010d\u00e1st\u00ed rafinace a slou\u017e\u00ed ke zv\u00fd\u0161en\u00ed v\u00fdt\u011b\u017enosti olej\u016f p\u0159i zpracov\u00e1n\u00ed semen. Rafinace neprob\u00edh\u00e1 za vysok\u00e9ho tlaku, ale naopak za vakua, aby se poda\u0159ilo odstranit t\u011bkav\u00e9 l\u00e1tky, kter\u00e9 jsou zdrojem r\u016fzn\u00fdch pachut\u00ed oleje. Rafinace olej\u016f je zcela odd\u011blena od v\u00fdroby margarin\u016f. Sou\u010dasn\u00e1 v\u00fdroba margarin\u016f prob\u00edh\u00e1 za n\u00edzk\u00fdch teplot, \u010dist\u011b fyzik\u00e1ln\u00edmi procesy zalo\u017een\u00fdmi na m\u00edch\u00e1n\u00ed a krystalizaci surovin. P\u0159i rafinaci m\u016f\u017ee doch\u00e1zet ke vzniku transmastn\u00fdch kyselin. Evropsk\u00e1 komise vydala v dubnu 2019 Na\u0159\u00edzen\u00ed (EU) \u010d. 2019\/649, podle kter\u00e9ho nesm\u00ed obsah transmastn\u00fdch kyselin jin\u00fdch ne\u017e p\u0159irozen\u011b se vyskytuj\u00edc\u00edch v tuc\u00edch \u017eivo\u010di\u0161n\u00e9ho p\u016fvodu p\u0159ekro\u010dit v potravin\u00e1ch ur\u010den\u00fdch pro kone\u010dn\u00e9ho spot\u0159ebitele a pro maloobchod hodnotu 2 g na 100 g tuku. Limit v tuc\u00edch nen\u00ed tud\u00ed\u017e 0,2 %, ale 2 %. Nen\u00ed t\u0159eba se odkazovat na studie University of Florida v Gainesville. Informace o vysok\u00e9m obsahu transmastn\u00fdch kyselin v \u0159epkov\u00e9m oleji se \u0161\u00ed\u0159\u00ed z organizace podporovan\u00e9 americk\u00fdmi chovateli dobytka. Pokud n\u011bkdo chce pou\u017e\u00edvat tuto argumentaci, m\u011bl by si ov\u011b\u0159it jej\u00ed p\u016fvod. Posta\u010d\u00ed se odk\u00e1zat na rozbory Vysok\u00e9 \u0161koly chemicko-technologick\u00e9 v Praze, kter\u00e9 dokumentuj\u00ed, \u017ee \u0159epkov\u00fd olej na na\u0161em trhu dan\u00e9mu limitu evropsk\u00e9 legislativy s velkou rezervou odpov\u00edd\u00e1. \u0158epkov\u00fd olej obsahuje 3x m\u00e9n\u011b transmastn\u00fdch kyselin ne\u017e ml\u00e9\u010dn\u00fd tuk, kde je obsah obvykle do 3 %, co\u017e p\u0159i um\u00edrn\u011bn\u00e9 konzumaci nep\u0159edstavuje probl\u00e9m.&nbsp;Konzumace transmastn\u00fdch kyselin zp\u016fsobuje r\u016fzn\u00e9 zdravotn\u00ed probl\u00e9my, rakovinotvorn\u00e9 \u00fa\u010dinky v\u0161ak nebyly prok\u00e1z\u00e1ny.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u0158epkov\u00fd olej ned\u00e1v\u00e1 n\u011bkter\u00fdm lidem sp\u00e1t.
