Jsou v&nbsp;pr\u016fm\u011bru 2,7 kr\u00e1t toxi\u010dt\u011bj\u0161\u00ed ne\u017e omega 6 a transtuky jsou proti nim jen lehk\u00fd odvar.<\/p>\n\n\n\n<p>\u0158epkov\u00fd a slune\u010dnicov\u00fd oleji p\u0159i&nbsp;celo\u017eivotn\u00ed konzumaci n\u00e1m podn\u00edt\u00ed, popo\u017eene proces zest\u00e1rnut\u00ed o&nbsp;10 a\u017e o&nbsp;20 let, p\u0159ivod\u00ed choroby st\u00e1\u0159\u00ed.&nbsp;<\/p>\n\n\n\n<p>V&nbsp;\u0159epkov\u00e9m oleji je kadmia v\u00edce u\u017e z&nbsp;d\u016fvodu, \u017ee \u0159epka se p\u011bstuje na zne\u010di\u0161t\u011bn\u00fdch pol\u00edch, kde nic po\u0159\u00e1dn\u011b neroste. Tak\u00e9 je zdrojem t\u011b\u017ek\u00e9ho kovu vanadu. Slune\u010dnice je rostlina, kter\u00e1 p\u0159\u00edmo vychyt\u00e1v\u00e1 kadmium, a zv\u00fd\u0161en\u00fd obsah je i&nbsp;v&nbsp;semenech. Pozor na slune\u010dnicov\u00e9 chleby!<\/p>\n\n\n\n<p>Nenasycen\u00e9 oleje jako \u0159epkov\u00fd zhor\u0161uj\u00ed inzulinovou rezistenci. \u0158e\u0161en\u00edm je j\u00edst v\u00edce nasycen\u00fdch tuk\u016f (n\u00edzk\u00fd glykemick\u00fd index).<\/p>\n\n\n\n<p>Na\u0161e t\u011blo \u00fadajn\u011b pot\u0159ebuje celkem 0,5 a\u017e 1 gram esenci\u00e1ln\u00edch mastn\u00fdch kyselin, mezi ne\u017e se \u0159ad\u00ed&nbsp;EPA (eikosapentaenov\u00e1 ze skupiny omega 3), DHA (dokosahexaenov\u00e1 ze skupiny omega 3) a LA (linolov\u00e1 ze skupiny omega 6).&nbsp;Kyselinu linolovou nepot\u0159ebujeme dopl\u0148ovat, vyskytuje se v&nbsp;nadbyte\u010dn\u00e9m mno\u017estv\u00ed. Ve v\u011bt\u0161\u00edm mno\u017estv\u00ed urychluj\u00ed st\u00e1rnut\u00ed stejn\u011b jako jin\u00e9 omega 3 a omega 6 tuky. V&nbsp;propagovan\u00fdch rostlinn\u00fdch olej\u00edch jsou z\u00e1rove\u0148 s&nbsp;nimi zcela nepot\u0159ebn\u00e9 nenasycen\u00e9 mastn\u00e9 kyseliny a t\u011bch je v&nbsp;olej\u00edch 100 kr\u00e1t v\u011bt\u0161\u00ed mno\u017estv\u00ed<strong>,<\/strong>ne\u017e je ono blahod\u00e1rn\u00e9 mno\u017estv\u00ed. Denn\u00ed pot\u0159ebu esenci\u00e1ln\u00edch mastn\u00fdch kyselin pokryje dostate\u010dn\u011b p\u0159\u00edjem m\u00e1sla, smetany a ml\u00e9ka, masa, s\u00e1dla a loje.&nbsp;V denn\u00ed spot\u0159eb\u011b m\u00e1sla a smetany je obsa\u017een asi 1&nbsp;gram EPA a DHA, tak\u017ee nen\u00ed nutno do j\u00eddeln\u00ed\u010dku \u017e\u00e1dn\u00e9 dal\u0161\u00ed p\u0159id\u00e1vat.<\/p>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p><strong><em>\u010cl\u00e1nek okomentoval doc. Ing. Ji\u0159\u00ed Br\u00e1t, CSc.<\/em><\/strong><\/p>\n\n\n\n<p style=\"color:#06700d\" class=\"has-text-color\">Informace v \u010dl\u00e1nku je t\u0159eba uv\u00e9st na spr\u00e1vnou m\u00edru. Z\u00e1kladn\u00edm pochyben\u00edm v obou \u010dl\u00e1nc\u00edch je d\u00e1v\u00e1n\u00ed do souvislosti konzumace nenasycen\u00fdch mastn\u00fdch kyselin s jejich potenci\u00e1ln\u00ed oxidac\u00ed v organismu. Mezi esenci\u00e1ln\u00ed mastn\u00e9 kyseliny pat\u0159\u00ed kyselina linolov\u00e1 (LA) a kyselina linolenov\u00e1 (ALA). EPA a DHA jsou pseudoesenci\u00e1ln\u00ed, organismus si je um\u00ed vytv\u00e1\u0159et, ale p\u0159em\u011bna v organismu nen\u00ed dostate\u010dn\u00e1, proto mus\u00ed b\u00fdt dopl\u0148ov\u00e1ny stravou. Doporu\u010den\u00fd p\u0159\u00edjem pro omega 3 mastn\u00e9 kyseliny je zhruba 1-4 g a pro omega 6 mastn\u00e9 kyseliny 5-18 g, krom\u011b toho bychom m\u011bli konzumovat alespo\u0148 250 mg EPA a DHA. Tedy nikoliv 0,5 a\u017e 1 g v\u0161ech esenci\u00e1ln\u00edch mastn\u00fdch kyselin dohromady. Polynenasycen\u00e9 mastn\u00e9 kyseliny hraj\u00ed nezastupitelnou roli v \u0159ad\u011b bun\u011b\u010dn\u00fdch mechanism\u016f. Bez nich by nemohla existovat \u017e\u00e1dn\u00e1 bu\u0148ka. Organismus naopak v\u016fbec nepot\u0159ebuje p\u0159ij\u00edmat nasycen\u00e9 mastn\u00e9 kyseliny, t\u0159eba\u017ee jsou rovn\u011b\u017e d\u016fle\u017eit\u00e9. T\u011blo si je um\u00ed vytvo\u0159it samo, kdy\u017e je pot\u0159ebuje.<\/p>\n\n\n\n<p style=\"color:#06700d\" class=\"has-text-color\">V r\u00e1mci typick\u00e9 stravy obvykle konzumujeme m\u00e9n\u011b omega 3 mastn\u00fdch kyselin, ne\u017e bychom m\u011bli. P\u0159\u00edjem omega 6 mastn\u00fdch kyselin se pohybuje v r\u00e1mci v\u00fd\u017eivov\u00fdch doporu\u010den\u00ed a nen\u00ed v nadbytku. \u017divo\u010di\u0161n\u00e9 tuky rozhodn\u011b nesta\u010d\u00ed dodat pot\u0159ebn\u00e9 mno\u017estv\u00ed esenci\u00e1ln\u00edch mastn\u00fdch kyselin, obsah omega 3 mastn\u00fdch kyselin je v nich nutri\u010dn\u011b nev\u00fdznamn\u00fd. Ml\u00e9\u010dn\u00fd tuk a smetana neobsahuj\u00ed EPA a DHA. Nenasycen\u00e9 mastn\u00e9 kyseliny nezhor\u0161uj\u00ed inzulinovou rezistenci. V\u0161echny tuky sni\u017euj\u00ed glykemick\u00fd index potravin, nen\u00ed to specifick\u00e1 vlastnost nasycen\u00fdch tuk\u016f.&nbsp;Omega 3 mastn\u00e9 kyseliny rozhodn\u011b nejsou toxick\u00e9 a hor\u0161\u00ed ne\u017e transmastn\u00e9 kyseliny. Strava s p\u0159\u00edjmem esenci\u00e1ln\u00edch mastn\u00fdch kyselin v intervalu v\u00fd\u017eivov\u00fdch doporu\u010den\u00ed nejen, \u017ee nevyvol\u00e1v\u00e1 \u017e\u00e1dn\u00e9 zdravotn\u00ed probl\u00e9my, ale naopak pom\u00e1h\u00e1 zdravotn\u00edm probl\u00e9m\u016fm p\u0159edch\u00e1zet, na rozd\u00edl od vysok\u00e9 konzumace nasycen\u00fdch mastn\u00fdch kyselin nad limitem tolerovan\u00e9ho p\u0159\u00edjmu (cca 20 g), co\u017e je v r\u00e1mci sou\u010dasn\u00e9 skladby&nbsp;&nbsp;stravy zcela b\u011b\u017en\u00e9. P\u0159\u00edjem EPA a DHA z dopl\u0148k\u016f stravy by nem\u011bl p\u0159ekra\u010dovat 5 g.&nbsp;<\/p>\n\n\n\n<p style=\"color:#06700d\" class=\"has-text-color\">V organismu se mohou vyskytovat voln\u00e9 radik\u00e1ly, a m\u016f\u017ee doch\u00e1zek k iniciaci ne\u017e\u00e1douc\u00edch chemick\u00fdch reakc\u00ed. To m\u016f\u017ee&nbsp;&nbsp;v dlouhodob\u00e9m horizontu zp\u016fsobovat i n\u011bkter\u00e9 zdravotn\u00ed pot\u00ed\u017ee, jak je popisov\u00e1no v \u010dl\u00e1nc\u00edch. V organismu panuje za norm\u00e1ln\u00edch okolnost\u00ed rovnov\u00e1ha mezi p\u016fsoben\u00edm voln\u00fdch radik\u00e1l\u016f a antioxidant\u016f jako vitamin C, vitamin E, selen nebo zinek. Proto je d\u016fle\u017eit\u00e9 tyto l\u00e1tky konzumovat v r\u00e1mci pestr\u00e9 a vyv\u00e1\u017een\u00e9 stravy v dostate\u010dn\u00e9m mno\u017estv\u00ed. Vitamin E je p\u0159\u00edmo zastoupen v rostlinn\u00fdch olej\u00edch. Z\u00e1rove\u0148 je pot\u0159eba se vyvarovat i vliv\u016fm, kter\u00e9 podn\u011bcuj\u00ed oxidativn\u00ed stres, nap\u0159. t\u011b\u017ek\u00e9 kovy nebo i kou\u0159en\u00ed.<\/p>\n\n\n\n<p style=\"color:#06700d\" class=\"has-text-color\">Pro v\u00fdskyt t\u011b\u017ek\u00fdch kov\u016f v potravin\u00e1ch plat\u00ed hygienick\u00e9 limity. \u017d\u00e1dn\u00e1 potravina ani \u0159epkov\u00fd olej nebo slune\u010dnicov\u00e1 semena jej nesm\u00ed p\u0159ekra\u010dovat. \u0158epka se rozhodn\u011b nep\u011bstuje na zne\u010di\u0161t\u011bn\u00fdch pol\u00edch, kde nic neroste.\u0158epkov\u00fd olej m\u00e1 vyv\u00e1\u017een\u00e9 slo\u017een\u00ed mastn\u00fdch kyselin z hlediska obsahu omega 3 a 6 mastn\u00fdch kyselin a proto je doporu\u010dov\u00e1n k pravideln\u00e9 konzumaci. Z b\u011b\u017en\u00fdch olej\u016f se pod\u00edl\u00ed nejm\u00e9n\u011b na zvy\u0161ov\u00e1n\u00ed p\u0159\u00edjmu nasycen\u00fdch mastn\u00fdch kyselin ve strav\u011b. Rozhodn\u011b neobsahuje 100 n\u00e1sobn\u00e9 mno\u017estv\u00ed nenasycen\u00fdch mastn\u00fdch kyselin, ne\u017e organismus pot\u0159ebuje.
