Co lze o\u010dek\u00e1vat od \u0159epkov\u00e9ho oleje na na\u0161em trhu? \u010casopis dTest publikoval v prosinci 2019 v\u00fdsledky hodnocen\u00ed celkem 17 r\u016fzn\u00fdch \u0159epkov\u00fdch olej\u016f zakoupen\u00fdch v na\u0161\u00ed tr\u017en\u00ed s\u00edti. N\u011bkter\u00e9 byly od tuzemsk\u00fdch v\u00fdrobc\u016f, jin\u00e9 poch\u00e1zely ze zahrani\u010d\u00ed. \u0158epka olejka je komodita, s n\u00ed\u017e se \u010dile obchoduje. Olej vyprodukovan\u00fd v zahrani\u010d\u00ed m\u016f\u017ee poch\u00e1zet i ze semen vyp\u011bstovan\u00fdch u n\u00e1s. V\u00fdsledky nep\u0159inesly \u017e\u00e1dn\u00e1 v\u011bt\u0161\u00ed p\u0159ekvapen\u00ed. \u0158ada m\u00fdt\u016f, kter\u00e9 se s \u0159epkov\u00fdm olejem spojuj\u00ed, byla t\u00edmto testem i vyvr\u00e1cena.\u00a0<\/p>\n\n\n\n<p><strong>Slo\u017een\u00ed mastn\u00fdch kyselin<\/strong><\/p>\n\n\n\n<p>Kyselina erukov\u00e1, o n\u00ed\u017e se v souvislosti s \u0159epkov\u00fdm olejem \u010dasto p\u00ed\u0161e, je v olej\u00edch v\u00fdrazn\u011b pod limitn\u00ed hranic\u00ed 2 %. Nejvy\u0161\u0161\u00ed obsah v oleji ve sledovan\u00e9m souboru vzork\u016f \u010dinil 0,3 %.&nbsp;<\/p>\n\n\n\n<p>V&nbsp;\u010cesk\u00e9 republice m\u00e1me vy\u0161\u0161\u00ed p\u0159\u00edjem nasycen\u00fdch, a naopak ni\u017e\u0161\u00ed p\u0159\u00edjem omega 3 nenasycen\u00fdch mastn\u00fdch kyselin. P\u0159\u00edjem omega 6 mastn\u00fdch kyselin se pohybuje v intervalu doporu\u010dovan\u00fdch hodnot. \u0158epkov\u00fd olej obsahuje p\u0159ibli\u017en\u011b 8 % nasycen\u00fdch, okolo 10 % omega 3 a 20 % omega 6 mastn\u00fdch kyselin, co\u017e rovn\u011b\u017e test prok\u00e1zal. D\u00edky skladb\u011b mastn\u00fdch kyselin \u0159ad\u00ed odborn\u00edci na v\u00fd\u017eivu \u0159epkov\u00fd olej mezi nutri\u010dn\u011b nejv\u00fdznamn\u011bj\u0161\u00ed oleje s ohledem na b\u011b\u017enou skladbu stravy v na\u0161\u00ed populaci. Nahrad\u00ed-li \u0159epkov\u00fd olej jin\u00e9 b\u011b\u017en\u011b konzumovan\u00e9 tuky, p\u0159ibli\u017euje se skladba tuk\u016f v\u00fd\u017eivov\u00fdm doporu\u010den\u00edm odborn\u00fdch spole\u010dnost\u00ed.<\/p>\n\n\n\n<p><strong>Lisovan\u00fd za studena nebo rafinovan\u00fd?<\/strong><\/p>\n\n\n\n<p>Na internetu se hodn\u011b mluv\u00ed o p\u0159\u00ednosech olej\u016f za studena lisovan\u00fdch. Jak prok\u00e1zal v\u00fdsledek dTestu, olej lisovan\u00fd za studena m\u011bl nejvy\u0161\u0161\u00ed hodnoty peroxidov\u00e9ho \u010d\u00edsla (peroxidov\u00e9 \u010d\u00edslo vypov\u00edd\u00e1 o mno\u017estv\u00ed prim\u00e1rn\u00edch oxida\u010dn\u00edch produkt\u016f) i \u010d\u00edsla kyselosti (\u010d\u00edslo kyselosti ukazuje na obsah voln\u00fdch mastn\u00fdch kyselin). V olej\u00edch lisovan\u00fdch za studena m\u016f\u017eeme \u010dast\u011bji naj\u00edt i pesticidy, kter\u00e9 rafinace m\u016f\u017ee odstranit. Na druhou stranu se v rafinovan\u00fdch olej\u00edch mohou vyskytnout n\u011bkter\u00e9 kontaminanty vznikaj\u00edc\u00ed v pr\u016fb\u011bhu v\u00fdroby. I toto potvrdil dTest.<\/p>\n\n\n\n<p><strong>Potenci\u00e1ln\u00ed kontaminanty v olej\u00edch<\/strong><\/p>\n\n\n\n<p>Ani v jednom oleji se nena\u0161el glyfos\u00e1t, kter\u00fd se pou\u017e\u00edv\u00e1 v post\u0159ic\u00edch proti plevel\u016fm, nebo m\u016f\u017ee b\u00fdt pou\u017eit p\u0159i desikaci semen p\u0159ed sklizn\u00ed. Glyfos\u00e1t je ter\u010dem kritiky n\u011bkter\u00fdch odp\u016frc\u016f \u0159epky. Potenci\u00e1ln\u00ed rakovinotvorn\u00e9 \u00fa\u010dinky, o nich\u017e se \u010dasto p\u00ed\u0161e na internetu, mohou b\u00fdt sp\u00ed\u0161e zp\u016fsobeny nevhodnou manipulac\u00ed s post\u0159iky ne\u017e konzumac\u00ed o\u0161et\u0159en\u00fdch zem\u011bd\u011blsk\u00fdch plodin, \u0159epka v tomto sm\u011bru nen\u00ed jedin\u00e1. Dal\u0161\u00ed pesticidy nalezen\u00e9 ve 3 vzorc\u00edch ze 17 (v\u010detn\u011b za studena lisovan\u00e9ho) byly v norm\u011b do jedn\u00e9 p\u011btiny povolen\u00fdch hodnot. Podobn\u011b byly v norm\u011b i n\u011bkter\u00e9 dal\u0161\u00ed kontaminanty, kter\u00e9 se v olej\u00edch rovn\u011b\u017e mohou vyskytnout. Estery glycidolu zji\u0161t\u011bn\u00e9 u 3 vzork\u016f byly na desetin\u011b povolen\u00e9 hodnoty 1 mg\/kg. Rovn\u011b\u017e obsah 3-MCPD (3-monochlorpropandiolu), pokud jej olej obsahoval, byl v\u00fdrazn\u011b pod hranic\u00ed limitu 1,25 mg\/kg, kter\u00fd zat\u00edm nen\u00ed schv\u00e1len, ale je ve st\u00e1diu n\u00e1vrhu ze strany Evropsk\u00e9 komise. V\u0161echny \u0159epkov\u00e9 oleje na na\u0161em trhu lze proto pova\u017eovat za bezpe\u010dn\u00e9.<\/p>\n\n\n\n<p><strong>Senzorick\u00e9 vlastnosti<\/strong><\/p>\n\n\n\n<p>Oleje na trhu se mohou li\u0161it z hlediska senzorick\u00fdch vlastnost\u00ed. U n\u011bkter\u00fdch vzork\u016f byly zaznamen\u00e1ny pachut\u011b, kter\u00e9 v\u0161ak nemus\u00ed ovlivnit jen v\u00fdrobce. Souvis\u00ed to i se zp\u016fsobem skladov\u00e1n\u00ed olej\u016f v obchodn\u00ed s\u00edti a s dobou, kter\u00e1 uplynula od data v\u00fdroby. V\u0161echny oleje odpov\u00eddaly standard\u016fm, kter\u00e9 doporu\u010duje Codex Alimentarius:<\/p>\n\n\n\n<p><strong><em>\u010c\u00edslo kyselosti:<\/em><\/strong> <br>Rafinovan\u00e9 tuky a oleje 0,6 mg KOH\/g tuku<br>Panensk\u00e9 a za studena lisovan\u00e9 tuky a oleje 4,0 mg KOH\/g tuku\u00a0<\/p>\n\n\n\n<p><strong><em>Peroxidov\u00e9 \u010d\u00edslo: <\/em><\/strong><br>Panensk\u00e9 a za studena lisovan\u00e9 tuky a oleje 15 mekv. O<sub>2<\/sub>\/kg oleje<br>Ostatn\u00ed tuky a oleje 10 mekv. O<sub>2<\/sub>\/kg oleje<\/p>\n\n\n\n<p><strong>Z\u00e1v\u011br<\/strong><\/p>\n\n\n\n<p>Rozs\u00e1hl\u00fd soubor testovan\u00fdch vzork\u016f \u0159epkov\u00e9ho oleje nep\u0159inesl \u017e\u00e1dn\u00e1 p\u0159ekvapen\u00ed, jich\u017e by se m\u011bl spot\u0159ebitel ob\u00e1vat. \u0158epkov\u00fd olej m\u00e1 vynikaj\u00edc\u00ed v\u00fd\u017eivovou hodnotu a p\u0159\u00edpadn\u00e9 negativn\u00ed l\u00e1tky nep\u0159ekra\u010duj\u00ed r\u00e1mec povolen\u00fdch a bezpe\u010dn\u00fdch hodnot.\u00a0<\/p>\n\n\n\n<p><strong><em>doc.
