B\u011bhem tepeln\u00e9 \u00fapravy je stabiln\u00ed, proto se hod\u00ed i pro sma\u017een\u00ed. O jak\u00e9m tuku je \u0159e\u010d?<\/p>\n\n\n\n<p>\u0158e\u010d je samoz\u0159ejm\u011b o \u0159epkov\u00e9m oleji. \u0158epka olejka pat\u0159\u00ed do rodiny zel\u00ed a je bl\u00edzk\u00e1 p\u0159\u00edbuzn\u00e1 tu\u0159\u00ednu a ho\u0159\u010dice. \u0158epka, z&nbsp;n\u00ed\u017e se vyr\u00e1b\u00ed kuchy\u0148sk\u00fd \u0159epkov\u00fd olej, vznikla kdysi tradi\u010dn\u00edm k\u0159\u00ed\u017een\u00edm. Aby bylo \u0159epkov\u00fd olej mo\u017eno naz\u00fdvat \u201e\u0159epkov\u00fdm olejem\u201c, mus\u00ed obsahovat maxim\u00e1ln\u011b 2% kyseliny erukov\u00e9 a spl\u0148ovat mezin\u00e1rodn\u00ed normy.<\/p>\n\n\n\n<p><strong>Cenn\u00e9 tuky a v&nbsp;nich rozpustn\u00e9 vitam\u00edny<\/strong><br>\u010cist\u00fd olej v&nbsp;podob\u011b toho \u0159epkov\u00e9ho dod\u00e1 zdrav\u00e9 tuky a vitaminy rozpustn\u00e9 v&nbsp;tuc\u00edch, jako je vitamin E \u2013 siln\u00fd antioxidant podporuj\u00edc\u00ed zdrav\u00ed poko\u017eky a o\u010d\u00ed \u2013 a vitamin K. D\u00edky p\u0159irozen\u011b n\u00edzk\u00e9mu obsahu nasycen\u00fdch a vysok\u00e9mu obsahu nenasycen\u00fdch tuk\u016f podporuje zdrav\u00ed srdce. Hlavn\u00ed roli v&nbsp;tom hraje kyselina alfa-linolenov\u00e1 (ALA), jedna z omega-3 mastn\u00fdch kyselin. ALA je esenci\u00e1ln\u00ed&nbsp; v ide\u00e1ln\u00edm p\u0159\u00edpad\u011b se v t\u011ble dok\u00e1\u017ee \u010d\u00e1ste\u010dn\u011b p\u0159em\u011bnit na dal\u0161\u00ed dv\u011b omega-3 mastn\u00e9 kyseliny \u2013 na kyselinu eikosapentaenovou (EPA) a kyselinu dokosahexaenovou (DHA).<ins><\/ins><\/p>\n\n\n\n<p>\u0158epkov\u00fd olej m\u00e1 tak\u00e9 vysok\u00fd obsah omega-6 tuk\u016f, kter\u00e9 podporuj\u00ed celkov\u00e9 zdrav\u00ed, jsou-li konzumov\u00e1ny v m\u00edrn\u00e9m mno\u017estv\u00ed. V\u011bt\u0161ina lid\u00ed v\u0161ak ve sv\u00e9 strav\u011b p\u0159ij\u00edm\u00e1 p\u0159\u00edli\u0161 mnoho tuku omega-6, co\u017e m\u016f\u017ee v\u00e9st ke zv\u00fd\u0161en\u00ed rizika vzniku z\u00e1n\u011btu. \u0158epkov\u00fd olej ale z\u00e1n\u011btlivost nepodporuje, proto\u017ee vynik\u00e1 ide\u00e1ln\u00edm pom\u011brem omega-3 k omega-6 1:2. Ned\u00e1vn\u00e1 anal\u00fdza studi\u00ed dokonce zjistila, \u017ee pravideln\u00e1 konzumace \u0159epkov\u00e9ho oleje vedla k ni\u017e\u0161\u00edm hladin\u00e1m LDL (\u0161patn\u00e9ho) a celkov\u00e9ho cholesterolu, co\u017e v\u00e1s m\u016f\u017ee ochr\u00e1nit p\u0159ed vznikem srde\u010dn\u00edch onemocn\u011bn\u00ed.<\/p>\n\n\n\n<p><strong>Vysok\u00fd kou\u0159ov\u00fd bod, neutr\u00e1ln\u00ed chu\u0165 a p\u0159\u00edzniv\u00e1 cena<\/strong><br>Dal\u0161\u00edm v\u00fdznamn\u00fdm benefitem \u0159epkov\u00e9ho oleje je fakt, \u017ee m\u00e1 pom\u011brn\u011b vysok\u00fd kou\u0159ov\u00fd bod, co\u017e znamen\u00e1, \u017ee je stabiln\u00ed a\u017e do teploty okolo 210\u00b0C. D\u00edky tomu se skv\u011ble hod\u00ed pro op\u00e9k\u00e1n\u00ed, pe\u010den\u00ed, sma\u017een\u00ed kapra \u010di \u0159\u00edzk\u016f a jin\u00e9 zp\u016fsoby tepeln\u00fdch \u00faprav. Pro ty je vhodn\u00fd i d\u00edky neutr\u00e1ln\u00ed chuti, kter\u00e1 jej p\u0159edur\u010duje i k&nbsp;pou\u017eit\u00ed v&nbsp;kuchyni studen\u00e9. Skv\u011ble tak zafunguje i v&nbsp;sal\u00e1tov\u00fdch dresinz\u00edch. Krom\u011b toho v\u0161eho je tak\u00e9 cenov\u011b dostupn\u00fd, co\u017e z&nbsp;n\u011bj \u010din\u00ed tak\u0159ka ide\u00e1ln\u00ed potravinu.<\/p>\n\n\n\n<p><strong>Geneticky modifikovan\u00fd a vysoce zpracovan\u00fd<\/strong><br>\u0158epkov\u00fd olej zat\u00edm vypad\u00e1 jako pom\u011brn\u011b ide\u00e1ln\u00ed potravina. M\u00e1 n\u011bjak\u00e9 nev\u00fdhody? O genetick\u00e9 modifikaci jsme ji\u017e mluvili. A\u010dkoliv se obecn\u011b tvrd\u00ed, \u017ee GMO zdravotn\u011b ne\u0161kod\u00ed, \u0159ada lid\u00ed se jim z&nbsp;pochopiteln\u00fdch d\u016fvod\u016f vyh\u00fdb\u00e1. Dal\u0161\u00edm m\u00ednusem je fakt, \u017ee podobn\u011b jako v\u011bt\u0161ina olej\u016f u\u017e\u00edvan\u00fdch v&nbsp;potravin\u00e1\u0159sk\u00e9m pr\u016fmyslu, je i ten \u0159epkov\u00fd vysoce zpracovan\u00fd. K&nbsp;jeho \u201e\u010di\u0161t\u011bn\u00ed\u201c se p\u0159id\u00e1v\u00e1 chemick\u00e9 rozpou\u0161t\u011bdlo zvan\u00e9 hexan, kter\u00e9 v&nbsp;procesu filtrace vede ke sn\u00ed\u017een\u00ed obsahu vitaminu E a voln\u00fdch mastn\u00fdch kyselin, co\u017e m\u016f\u017ee sn\u00ed\u017eit zdravotn\u00ed p\u0159\u00ednosnost oleje. Pokud hled\u00e1te alternativu k&nbsp;vysoce zpracovan\u00e9mu \u0159epkov\u00e9mu oleji, zkuste jeho za studena lisovanou verzi, v&nbsp;n\u00ed\u017e si olej zachov\u00e1v\u00e1 v\u011bt\u0161inu \u017eivin. Obsahuje v\u0161ak v z\u00e1v\u011bru n\u011bkolik pochyben\u00ed, kter\u00e9 se lavinovit\u011b \u0161\u00ed\u0159\u00ed po internetu. \u0158epka p\u011bstovan\u00e1 v r\u00e1mci EU nen\u00ed geneticky modifikovan\u00e1 (<a href=\"https:\/\/www.olejnadzlato.cz\/?page_id=12\">vysv\u011btleno v m\u00fdtech na tomto webu<\/a>). Hexan se nepou\u017e\u00edv\u00e1 k \u201e\u010di\u0161t\u011bn\u00ed\u201c oleje, ale k jeho z\u00edsk\u00e1v\u00e1n\u00ed. Semena olejnin (v\u010detn\u011b \u0159epky) obsahuj\u00ed po lisov\u00e1n\u00ed st\u00e1le v\u00fdznamn\u00fd pod\u00edl oleje, kter\u00fd lze z nich z\u00edskat pomoc\u00ed hexanu. To zvy\u0161uje v\u00fdt\u011b\u017enost oleje ze semen a zlep\u0161uje ekonomiku procesu zpracov\u00e1n\u00ed olejnin a prom\u00edt\u00e1 se i do ceny oleje, kter\u00e1 je d\u00edky tomu ni\u017e\u0161\u00ed. Hexan se n\u00e1sledn\u011b odpa\u0159\u00ed (nikoliv odfiltruje). Voln\u00e9 mastn\u00e9 kyseliny nevznikaj\u00ed v olej\u00edch p\u016fsoben\u00edm hexanu, ale enzym\u016f, kter\u00e9 jsou p\u0159\u00edtomn\u00e9 v semenech. Hexan rovn\u011b\u017e nesni\u017euje obsah vitaminu E v oleji, je tomu pr\u00e1v\u011b naopak. Podobn\u011b jako hexan vyt\u00e1hne ze semen v\u011bt\u0161inu oleje, kter\u00fd v nich zbyl po lisov\u00e1n\u00ed, tot\u00e9\u017e se d\u011bje i v p\u0159\u00edpad\u011b vitaminu E. Olej z\u00edskan\u00fd ze semen pomoc\u00ed hexanu obsahuje v\u00edce vitaminu E ne\u017e olej lisovan\u00fd za studena. Oleje lisovan\u00e9 za studena na druhou stranu obsahuj\u00ed n\u011bkter\u00e9 nutri\u010dn\u011b v\u00fdznamn\u00e9 l\u00e1tky (nap\u0159. fosfolipidy), kter\u00e9 v rafinovan\u00fdch olej\u00edch chyb\u00ed. Ty se v\u0161ak za vy\u0161\u0161\u00edch teplot rozkl\u00e1daj\u00ed. Oleje lisovan\u00e9 za studena maj\u00ed obecn\u011b ni\u017e\u0161\u00ed bod zakou\u0159en\u00ed, proto se doporu\u010duj\u00ed k pou\u017eit\u00ed ve studen\u00e9 kuchyni, ke sma\u017een\u00ed (nap\u0159. kapra) jsou m\u00e9n\u011b vhodn\u00e9. \u0158adit b\u011b\u017en\u00fd \u0159epkov\u00fd olej mezi vysoce zpracovan\u00e9 potraviny rovn\u011b\u017e nen\u00ed na m\u00edst\u011b. Vysoce zpracovan\u00e9 potraviny obsahuj\u00ed podle definice \u0159adu p\u0159\u00eddatn\u00fdch l\u00e1tek, co\u017e nen\u00ed p\u0159\u00edpad olej\u016f. Mezi vysoce zpracovan\u00e9 oleje lze za\u0159adit tuky ztu\u017eovan\u00e9 vod\u00edkem, v nich\u017e p\u0159\u00edtomn\u00e9 transmastn\u00e9 kyseliny maj\u00ed negativn\u00ed dopad na lidsk\u00e9 zdrav\u00ed.
