Pou\u017eit\u00ed \u0159epkov\u00e9ho oleje k p\u0159\u00edprav\u011b pokrm\u016f se v dom\u00e1cnostech jednotliv\u00fdch c\u00edlov\u00fdch skupin li\u0161\u00ed. Uplatn\u011bn\u00ed nach\u00e1z\u00ed v&nbsp;kuchyn\u00edch necel\u00e9 poloviny \u017een s d\u011btmi do 15 let (43 %) a pouze jedn\u00e9 t\u0159etiny samostatn\u011b \u017eij\u00edc\u00edch osob ve v\u011bku 30-50 let a senior\u016f nad 60 let v\u011bku (32 %). V\u00edce ne\u017e t\u0159i p\u011btiny dot\u00e1zan\u00fdch nev\u00ed, zda je \u0159epkov\u00fd olej p\u0159\u00ednosn\u00fd (od 55 % u matek s d\u011btmi po 59 % u senior\u016f). Pom\u011brn\u011b velk\u00e9 mno\u017estv\u00ed dot\u00e1zan\u00fdch (zejm\u00e9na senio\u0159i \u2013 65 %) tak\u00e9 nen\u00ed schopno \u0159\u00edci, zda \u0159epkov\u00fd olej obsahuje sp\u00ed\u0161e prosp\u011b\u0161n\u00e9 mastn\u00e9 kyseliny nebo naopak ty ne\u017e\u00e1douc\u00ed.<\/p>\n\n\n\n<p>\u201e<em>Spr\u00e1v\u011b sestaven\u00fd j\u00eddeln\u00ed\u010dek by m\u011bl zajistit pot\u0159ebn\u00fd p\u0159\u00edjem v\u0161ech prosp\u011b\u0161n\u00fdch l\u00e1tek, zejm\u00e9na rostlinn\u00fdch olej\u016f bohat\u00fdch na omega-3 mastn\u00e9 kyseliny, a&nbsp;to zejm\u00e9na na \u00fakor \u017eivo\u010di\u0161n\u00fdch tuk\u016f a&nbsp;zdroj\u016f transmastn\u00fdch kyselin. P\u0159\u00ednos \u0159epkov\u00e9ho oleje spo\u010d\u00edv\u00e1 v n\u00edzk\u00e9m pod\u00edlu nezdrav\u00fdch nasycen\u00fdch mastn\u00fdch kyselin a&nbsp;velmi vysok\u00e9m obsahu prosp\u011b\u0161n\u00fdch v\u00edcenenasycen\u00fdch mastn\u00fdch kyselin,<\/em>\u201c \u0159\u00edk\u00e1 RNDr. Pavel Such\u00e1nek z&nbsp;Institutu klinick\u00e9 a&nbsp;experiment\u00e1ln\u00ed medic\u00edny.<\/p>\n\n\n\n<p>Nenasycen\u00e9 mastn\u00e9 kyseliny maj\u00ed pozitivn\u00ed vliv na&nbsp;sni\u017eov\u00e1n\u00ed rizika kardiovaskul\u00e1rn\u00edch onemocn\u011bn\u00ed, a&nbsp;to zejm\u00e9na d\u00edky ovlivn\u011bn\u00edm hladiny cholesterolu. D\u00e1le br\u00e1n\u00ed r\u016fstu aterosklerotick\u00fdch pl\u00e1t\u016f v&nbsp;c\u00e9v\u00e1ch a&nbsp;sni\u017euj\u00ed riziko tromb\u00f3z, kter\u00e9 zhor\u0161uj\u00ed pr\u016fchodnost c\u00e9v. Dostate\u010dn\u00fd p\u0159\u00edjem nenasycen\u00fdch mastn\u00fdch kyselin je podle posledn\u00edch v\u00fdzkum\u016f d\u016fle\u017eit\u00fd i pro v\u00fdvoj d\u011bt\u00ed a&nbsp;zdravotn\u00ed stav t\u011bhotn\u00fdch, ovliv\u0148uje i&nbsp;kvalitu k\u016f\u017ee a&nbsp;z\u00e1sadn\u00edm zp\u016fsobem se prom\u00edt\u00e1 do obranyschopnosti organismu nebo do&nbsp;v\u00fdskytu alergick\u00fdch onemocn\u011bn\u00ed. \u201e<em>Pro p\u0159\u00edjem doporu\u010den\u00e9ho mno\u017estv\u00ed v\u00edcenenasycen\u00fdch mastn\u00fdch kyselin omega-3 a omega-6 je pot\u0159ebn\u00fd p\u0159\u00edsun cca 100 ml \u0159epkov\u00e9ho za den,<\/em>\u201c dod\u00e1v\u00e1 RNDr. Such\u00e1nek.<\/p>\n\n\n\n<p>\u201e<em>A\u010dkoli bylo u \u0159epky za posledn\u00edch 35 let dosa\u017eeno nev\u00eddan\u00e9ho \u0161lechtitelsk\u00e9ho pokroku, nem\u00e1 \u0159epkov\u00fd olej z&nbsp;hlediska kvality v&nbsp;o\u010d\u00edch mnoha spot\u0159ebitel\u016f nejlep\u0161\u00ed pov\u011bst,<\/em>\u201c uv\u00e1d\u00ed Doc. Petr Baranyk, CSc. ze Svazu p\u011bstitel\u016f a zpracovatel\u016f olejnin a dod\u00e1v\u00e1: \u201e<em>P\u0159itom dne\u0161n\u00ed realita je \u00fapln\u011b jin\u00e1 \u2013 sou\u010dasn\u00e9 odr\u016fdy \u0159epky, z&nbsp;nich\u017e se olej vyr\u00e1b\u00ed, jsou kvalitativn\u011b v\u00fdznamn\u011b jin\u00e9 a&nbsp;v\u00fdrazn\u011b lep\u0161\u00ed, ne\u017e star\u00e9 \u2013 tzv. erukov\u00e9 odr\u016fdy. Od roku 1985 se v&nbsp;\u010cesk\u00e9 republice p\u011bstuj\u00ed v\u00fdlu\u010dn\u011b tyto nov\u00e9, tzv. dvounulov\u00e9 odr\u016fdy \u0159epky, kter\u00e9 poskytuj\u00ed olej velmi cen\u011bn\u00fd a doporu\u010dovan\u00fd odborn\u00edky na zdravou v\u00fd\u017eivu prakticky po&nbsp;cel\u00e9m sv\u011bt\u011b.<\/em>\u201c<\/p>\n\n\n\n<p>\u0158epkov\u00fd olej p\u0159edstavuje nutri\u010dn\u011b velmi hodnotnou potravinu, a p\u0159esto nen\u00ed jeho v\u00fdznam \u010desk\u00fdmi spot\u0159ebiteli dostate\u010dn\u011b doce\u0148ov\u00e1n, co\u017e vypl\u00fdv\u00e1 z&nbsp;dat o spot\u0159eb\u011b \u0159epkov\u00e9ho oleje pro potravin\u00e1\u0159sk\u00e9 \u00fa\u010dely. P\u0159itom hned za hranicemi, u na\u0161ich n\u011bmeck\u00fdch soused\u016f, se stal v roce 2010 \u0159epkov\u00fd olej nejobl\u00edben\u011bj\u0161\u00edm rostlinn\u00fdm olejem mezi spot\u0159ebiteli.
