Proto je t\u0159eba ocenit ka\u017ed\u00fd \u010dl\u00e1nek, kter\u00fd m\u00fdty o tuc\u00edch vyvrac\u00ed. Mezi n\u011b m\u016f\u017eeme po\u010d\u00edtat i rozhovor s profesorem Filipem z&nbsp;\u00dastavu ml\u00e9ka a tuk\u016f Vysok\u00e9 \u0161koly chemicko-technologick\u00e9 v&nbsp;Praze.&nbsp;<a href=\"https:\/\/www.idnes.cz\/onadnes\/zdravi\/vladimir-filip-tuk-olej-zdravi-sadlo-maslo-dieta-margarin.A231024_101815_zdravi_albe?zdroj=vybava_lidovky\">Rozhovor uve\u0159ejnila Mlad\u00e1 fronta DNES<\/a>&nbsp;(iDNES) bohu\u017eel v placen\u00e9 verzi Premium, kter\u00e1 pro \u0159adu b\u011b\u017en\u00fdch \u010dten\u00e1\u0159\u016f nen\u00ed dostupn\u00e1. V\u011bt\u0161inou se jedn\u00e1 o bublinu, kter\u00e1 po chv\u00edli splaskne. Jak potvrzuje prof. Filip, v&nbsp;posledn\u00edch letech doch\u00e1z\u00ed jen k&nbsp;minim\u00e1ln\u00edm zm\u011bn\u00e1m ve v\u00fd\u017eivov\u00fdch doporu\u010den\u00edch pro tuky. Lid\u00e9 by si m\u011bli hl\u00eddat energetick\u00fd p\u0159\u00edjem z&nbsp;tuk\u016f na \u00farovni 30 %, tolerov\u00e1no b\u00fdv\u00e1 i 35 %. P\u0159\u00edjem nasycen\u00fdch mastn\u00fdch kyselin by v&nbsp;procentech nem\u011bl p\u0159ekro\u010dit p\u0159\u00edjem mastn\u00fdch kyselin polynenasycen\u00fdch. Pozornost bychom m\u011bli v\u011bnovat omega 3 mastn\u00fdm kyselin\u00e1m. V&nbsp;dom\u00e1cnosti obl\u00edben\u00e9 oleje jako jsou olivov\u00fd a slune\u010dnicov\u00fd je prakticky neobsahuj\u00ed. Naopak \u0159epkov\u00fd olej je jejich dobr\u00fdm zdrojem.<\/p>\n\n\n\n<p><strong>Na co si d\u00e1vat pozor p\u0159i sma\u017een\u00ed<\/strong><\/p>\n\n\n\n<p>Pro \u0159adu konzument\u016f je obl\u00edben\u00fdm olejem na sma\u017een\u00ed slune\u010dnicov\u00fd olej, ten m\u00e1 v\u0161ak hor\u0161\u00ed tepelnou stabilitu ne\u017e olej \u0159epkov\u00fd. Teplota olej\u016f p\u0159i sma\u017een\u00ed by nem\u011bla p\u0159ekro\u010dit 200&nbsp;\u00b0C. Frit\u00e9zy jsou obvykle od v\u00fdrobce nastaveny na 180&nbsp;\u00b0C. K&nbsp;p\u0159epalov\u00e1n\u00ed olej\u016f v\u0161ak m\u016f\u017ee doch\u00e1zet p\u0159i sma\u017een\u00ed v&nbsp;tenk\u00e9 vrstv\u011b, na to je t\u0159eba pamatovat. Hodn\u011b se v&nbsp;posledn\u00ed dob\u011b propaguje sma\u017een\u00ed na s\u00e1dle vzhledem k&nbsp;tomu, \u017ee s\u00e1dlo obsahuje vy\u0161\u0161\u00ed pod\u00edl tepeln\u011b stabiln\u00edch nasycen\u00fdch mastn\u00fdch kyselin. Na druhou stranu v\u0161ak s\u00e1dlo obsahuje pouze 20 a\u017e 25 mg tokoferol\u016f v&nbsp;1 kg tuku. Tokoferoly maj\u00ed antioxida\u010dn\u00ed \u00fa\u010dinek. S\u00e1dlo a cholesterol v&nbsp;n\u011bm obsa\u017een\u00fd jsou tak m\u00e9n\u011b chr\u00e1n\u011bny v\u016f\u010di oxida\u010dn\u00edm zm\u011bn\u00e1m. Sma\u017eit by se nem\u011blo ani na panensk\u00e9m olivov\u00e9m oleji, naopak pln\u011b rafinovan\u00fd olivov\u00fd olej se na sma\u017een\u00ed hod\u00ed.<\/p>\n\n\n\n<p><strong>Transmastn\u00e9 kyseliny u\u017e nejsou probl\u00e9m<\/strong><\/p>\n\n\n\n<p>Transmastn\u00e9 kyseliny se st\u00e1le&nbsp;<a href=\"https:\/\/magazindoma.cz\/zivotni-styl\/595-jak-snizit-cholesterol-docilit-toho-muzete-jednoduse-drzte-se-ale-zasadnich-pravidel\">v&nbsp;n\u011bkter\u00fdch \u010dl\u00e1nc\u00edch<\/a>&nbsp;na webu objevuj\u00ed jako stra\u0161\u00e1k, a\u0165 u v&nbsp;margarinech nebo jin\u00fdch pr\u016fmyslov\u011b vyr\u00e1b\u011bn\u00fdch potravin\u00e1ch. Vy\u0161\u0161\u00ed konzumace palmov\u00e9ho oleje nen\u00ed z&nbsp;hlediska v\u00fd\u017eivy \u017e\u00e1douc\u00ed vzhledem k&nbsp;vy\u0161\u0161\u00edmu pom\u011brn\u00e9mu zastoupen\u00ed nasycen\u00fdch mastn\u00fdch kyselin. Alternativou nen\u00ed ani kokosov\u00fd olej, u n\u011bho\u017e je p\u0159evaha nasycen\u00fdch mastn\u00fdch kyselin je\u0161t\u011b vy\u0161\u0161\u00ed.<\/p>\n\n\n\n<p><strong>\u0158epkov\u00fd olej z\u00a0hlediska slo\u017een\u00ed vych\u00e1z\u00ed nejl\u00e9pe<\/strong><\/p>\n\n\n\n<p>I kdy\u017e n\u011bkter\u00e9 hospody\u0148ky mohou m\u00edt na v\u011bc jin\u00fd n\u00e1zor, tak z&nbsp;olej\u016f b\u011b\u017en\u011b dostupn\u00fdch na na\u0161em trhu vych\u00e1z\u00ed nejl\u00e9pe olej \u0159epkov\u00fd jako univerz\u00e1ln\u00ed pro v\u011bt\u0161inu aplikac\u00ed.
