S touto informac\u00ed p\u0159i\u0161el&nbsp;<a href=\"https:\/\/www.seznamzpravy.cz\/clanek\/zahranicni-skotsti-vedci-veri-ze-objevili-svaty-gral-nahradu-palmoveho-oleje-237035\">server Seznam zpr\u00e1v<\/a>, kter\u00fd vych\u00e1zel z&nbsp;<a href=\"https:\/\/www.bbc.com\/news\/uk-scotland-edinburgh-east-fife-66842496\">p\u016fvodn\u00edho sd\u011blen\u00ed BBC<\/a>. Podle t\u00e9to informace se jedn\u00e1 o v\u00fdrobek, kter\u00fd m\u00e1 podobnou konzistenci jako majon\u00e9za, neobsahuje \u017e\u00e1dn\u00e9 p\u0159\u00eddatn\u00e9 l\u00e1tky a je o 70 % \u0161etrn\u011bj\u0161\u00ed k \u017eivotn\u00edmu prost\u0159ed\u00ed ne\u017e nyn\u00ed pou\u017e\u00edvan\u00fd palmov\u00fd olej. Catriona Liddle, kter\u00e1 se spolupod\u00edlela na veden\u00ed v\u00fdvoje PALM-ALT, p\u0159irovnala produkt nahrazuj\u00edc\u00ed palmov\u00fd olej ke svat\u00e9mu gr\u00e1lu. P\u0159esto\u017ee nejsou vlastnosti suroviny poka\u017ed\u00e9 stejn\u00e9, najdeme ve slo\u017een\u00ed v\u017edy deklaraci: palmov\u00fd olej. Alternativa palmov\u00e9ho oleje by m\u011bla spl\u0148ovat funk\u010dn\u00ed po\u017eadavky pek\u00e1rensk\u00e9ho pr\u016fmyslu se srovnateln\u00fdmi organoleptick\u00fdmi vlastnostmi. V\u00fdrobek by m\u011bl b\u00fdt na rostlinn\u00e9 b\u00e1zi, bez p\u0159\u00eddatn\u00fdch l\u00e1tek a m\u011bl by m\u00edt vhodn\u011bj\u0161\u00ed nutri\u010dn\u00ed slo\u017een\u00ed v&nbsp;porovn\u00e1n\u00ed s&nbsp;palmov\u00fdm olejem. V\u00fdzkum prob\u00edhal od dubna 2021 do kv\u011btna 2022.<\/p>\n\n\n\n<p><strong>Z\u00a0\u010deho je v\u00fdrobek slo\u017een?<\/strong><\/p>\n\n\n\n<p>V\u00fdrobek obsahuje pouze 3 kl\u00ed\u010dov\u00e9 slo\u017eky: zpracovan\u00e9 v\u00fdlisky semen ln\u011bn\u00e9ho oleje, vl\u00e1kninu na b\u00e1zi beta-glukanu a \u0159epkov\u00fd olej + vodu. V\u00fdrobek podl\u00e9h\u00e1 ochran\u011b du\u0161evn\u00edho vlastnictv\u00ed, ale patent prozat\u00edm nebylo mo\u017en\u00e9 vyhledat v&nbsp;datab\u00e1zi. Z&nbsp;dostupn\u00fdch informac\u00ed obsahuje v\u00fdrobek oproti palmov\u00e9mu oleji o 25 % m\u00e9n\u011b tuku. Jin\u00fdmi slovy \u010dtvrtina v\u00fdrobku je tvo\u0159ena ln\u011bn\u00fdmi v\u00fdlisky a vl\u00e1kninou ve sm\u011bsi s&nbsp;vodou. I v \u010cesk\u00e9 republice prob\u00edhaly v minulosti podobn\u00e9 projekty zab\u00fdvaj\u00edc\u00ed se vyu\u017eit\u00edm ln\u011bn\u00fdch v\u00fdlisk\u016f v pek\u00e1rensk\u00e9m pr\u016fmyslu. Uplatn\u011bn\u00ed v praxi se ale p\u0159\u00edli\u0161 neujalo. Skot\u0161t\u00ed v\u011bdci na to \u0161li trochu jinak. M\u00edsto testov\u00e1n\u00ed p\u0159\u00eddavk\u016f sypk\u00fdch ingredienc\u00ed do t\u011bst ve v\u00fdrob\u011b p\u0159\u00edmo vymysleli surovinu, kter\u00e1 nahrad\u00ed palmov\u00fd olej v receptur\u00e1ch a m\u00e1 proto univerz\u00e1ln\u00ed pou\u017eit\u00ed. V\u00fdrobek \u00fadajn\u011b poskytuje srovnateln\u00e9 organoleptick\u00e9 vlastnosti produkt\u016f vyu\u017e\u00edvaj\u00edc\u00edch PALM-ALT m\u00edsto palmov\u00e9ho oleje.<\/p>\n\n\n\n<p><strong>Ekologick\u00e9 aspekty<\/strong><\/p>\n\n\n\n<p>Palmov\u00fd olej je \u010dasto spojov\u00e1n s odles\u0148ov\u00e1n\u00edm tropick\u00fdch prales\u016f.
