Na dne\u0161n\u00edm setk\u00e1n\u00ed p\u011bstitel\u016f a zpracovatel\u016f \u0159epky tak\u00e9 odborn\u00e1 komise ud\u011blila ocen\u011bn\u00ed \u201eNutri\u010dn\u011b nejkvalitn\u011bj\u0161\u00ed \u0159epka roku 2012\u201c dv\u011bma odr\u016fd\u00e1m \u0159epky olejky \u2013 v kategorii nov\u011b registrovan\u00fdch odr\u016fd zv\u00edt\u011bzila hybridn\u00ed odr\u016fda DK Explicit, v kategorii odr\u016fd z aktu\u00e1ln\u00edho Seznamu doporu\u010den\u00fdch odr\u016fd hybrid Jumper.<\/p>\n\n\n\n<p><strong>Projekt \u201e\u0158epkov\u00fd olej \u2013 olej nad zlato\u201c<\/strong><\/p>\n\n\n\n<p>Jde o t\u0159\u00edlet\u00fd projekt \u0159\u00edzen\u00fd Svazem p\u011bstitel\u016f a zpracovatel\u016f olejnin (SPZO), jeho\u017e c\u00edlem je podpora potravin\u00e1\u0159sk\u00e9ho vyu\u017eit\u00ed \u0159epkov\u00e9ho oleje v r\u00e1mci cel\u00e9 \u010cesk\u00e9 republiky a zv\u00fd\u0161en\u00ed pov\u011bdom\u00ed o nutri\u010dn\u00edch vlastnostech \u0159epkov\u00e9ho oleje a n\u00e1sledn\u011b mo\u017enosti jeho uplatn\u011bn\u00ed pro p\u0159\u00edmou konzumaci. Projekt je financov\u00e1n kombinovan\u011b ze zdroj\u016f Evropsk\u00e9 unie, Ministerstva zem\u011bd\u011blstv\u00ed\/SZIF, SPZO a dvou komer\u010dn\u00edch subjekt\u016f \u2013 Unilever a Agrofert.<\/p>\n\n\n\n<p><strong>Sout\u011b\u017e o nutri\u010dn\u011b nejkvalitn\u011bj\u0161\u00ed \u0159epku<\/strong><\/p>\n\n\n\n<p>Sout\u011b\u017e ji\u017e p\u00e1t\u00fd rok vyhla\u0161uje Svaz p\u011bstitel\u016f a zpracovatel\u016f olejnin (SPZO) a spole\u010dnost Unilever, kter\u00e1 vyu\u017e\u00edv\u00e1 \u0159epkov\u00fd olej pro v\u00fdrobu kvalitn\u00edho rostlinn\u00e9ho tuku Rama a majon\u00e9zy Hellmann\u00b4s. C\u00edlem sout\u011b\u017ee je mimo jin\u00e9 i propagace a podpora spot\u0159eby \u0159epkov\u00e9ho oleje v \u010cesk\u00e9 republice, kter\u00fd v\u00fd\u017eivov\u00ed odborn\u00edci doporu\u010duj\u00ed jako vhodn\u00fd pro lidsk\u00e9 zdrav\u00ed.<\/p>\n\n\n\n<p>\u201e\u0158epkov\u00fd olej je v\u00fdznamnou, ale zat\u00edm u n\u00e1s ne zcela docen\u011bnou surovinou v potravin\u00e1\u0159sk\u00e9m pr\u016fmyslu. Jeho konzumace p\u0159isp\u00edv\u00e1 k vyv\u00e1\u017een\u00e9mu p\u0159\u00edjmu jednotliv\u00fdch mastn\u00fdch kyselin a d\u00edky n\u00edzk\u00e9mu obsahu nasycen\u00fdch mastn\u00fdch kyselin v \u0159epkov\u00e9m oleji se jejich pod\u00edl v dan\u00e9 potravin\u011b sni\u017euje. Podobn\u011b pou\u017e\u00edv\u00e1n\u00ed \u0159epkov\u00e9ho oleje v dom\u00e1cnosti m\u00edsto jin\u00fdch olej\u016f a tuk\u016f rovn\u011b\u017e sni\u017euje konzumaci \u0161kodliv\u00fdch nasycen\u00fdch mastn\u00fdch kyselin. Proto jej odborn\u00edci doporu\u010duj\u00ed k p\u0159\u00edm\u00e9 spot\u0159eb\u011b i jako surovinu pro v\u00fdrobu r\u016fzn\u00fdch potravin \u2013 nap\u0159\u00edklad rostlinn\u00fdch tuk\u016f \u010di majon\u00e9z,\u201c \u0159\u00edk\u00e1 mana\u017eer v\u00fdvoje a jakosti doc. Ing. Ji\u0159\u00ed Br\u00e1t, CSc. ze spole\u010dnosti Unilever.<\/p>\n\n\n\n<p><strong>Odborn\u00edci doporu\u010duj\u00ed: vym\u011b\u0148te \u017eivo\u010di\u0161n\u00e9 tuky za rostlinn\u00e9<\/strong><\/p>\n\n\n\n<p>V posledn\u00edch letech maj\u00ed tuky obecn\u011b mezi \u0161irokou ve\u0159ejnost\u00ed \u0161patnou pov\u011bst. Nejv\u00fdrazn\u011bj\u0161\u00edm d\u016fvodem je nar\u016fstaj\u00edc\u00ed v\u00fdskyt nadv\u00e1hy v populaci. Ten v\u0161ak nen\u00ed spojen pouze s konzumac\u00ed tuk\u016f, ale p\u0159edev\u0161\u00edm s nerovnov\u00e1hou mezi p\u0159\u00edjmem a v\u00fddejem energie.<\/p>\n\n\n\n<p>Podle v\u00fd\u017eivov\u00fdch doporu\u010den\u00ed bychom m\u011bli konzumovat p\u0159ibli\u017en\u011b dv\u011b t\u0159etiny rostlinn\u00fdch tuk\u016f a jednu t\u0159etinu tuk\u016f \u017eivo\u010di\u0161n\u00fdch. To znamen\u00e1, \u017ee nenasycen\u00e9 mastn\u00e9 kyseliny by m\u011bly v na\u0161\u00ed strav\u011b p\u0159eva\u017eovat a od tohoto principu by se m\u011bl odv\u00edjet i v\u00fdb\u011br potravin a celkov\u00e1 skladba stravy.<\/p>\n\n\n\n<p><strong>Jak se hodnot\u00ed nejlep\u0161\u00ed \u0159epka?<\/strong><\/p>\n\n\n\n<p>\u201eHodnocen\u00ed p\u0159ihl\u00e1\u0161en\u00fdch odr\u016fd prob\u00edhalo podle p\u0159edem ur\u010den\u00fdch pravidel a pomoc\u00ed speci\u00e1ln\u00edho vzorce zohled\u0148uj\u00edc\u00edho nejvy\u0161\u0161\u00ed obsah esenci\u00e1ln\u00edch mastn\u00fdch kyselin, p\u0159i\u010dem\u017e v\u011bt\u0161\u00ed d\u016fraz byl<\/p>\n\n\n\n<p>kladen na obsah omega 3 mastn\u00fdch kyselin, kter\u00fdch je v na\u0161\u00ed strav\u011b v\u011bt\u0161\u00ed nedostatek,\u201c dod\u00e1v\u00e1 doc. Petr Baranyk, CSc. ze SPZO.<\/p>\n\n\n\n<p><strong>Pro\u010d je \u0159epkov\u00fd olej vhodn\u00fd pro v\u00fdrobu potravin a n\u00e1\u0161 organismus?<\/strong><\/p>\n\n\n\n<p>\u0158epkov\u00fd olej obsahuje v porovn\u00e1n\u00ed s ostatn\u00edmi oleji nejm\u00e9n\u011b nasycen\u00fdch mastn\u00fdch kyselin a naopak v\u00fdznamn\u00e9 mno\u017estv\u00ed v\u00edcenenasycen\u00fdch mastn\u00fdch kyselin v\u010detn\u011b esenci\u00e1ln\u00edch omega 3 a omega 6 mastn\u00fdch kyselin. Z hlediska pod\u00edlu omega 3 mastn\u00fdch kyselin pat\u0159\u00ed dokonce mezi nejv\u00fdznamn\u011bj\u0161\u00ed zdroje. I z toho d\u016fvodu v\u00fdrobci, v\u010detn\u011b spole\u010dnosti Unilever, vyu\u017e\u00edvaj\u00ed \u0159epkov\u00fd olej pro v\u00fdrobu kvalitn\u00edch rostlinn\u00fdch tuk\u016f \u010di majon\u00e9z.<\/p>\n\n\n\n<p>V\u00fd\u017eivov\u00ed odborn\u00edci z \u010cesk\u00e9 republiky i cel\u00e9ho sv\u011bta se tak\u00e9 shoduj\u00ed na nutnosti omezovat p\u0159\u00edjem nasycen\u00fdch a trans mastn\u00fdch nenasycen\u00fdch kyselin, obsa\u017een\u00fdch zejm\u00e9na v \u017eivo\u010di\u0161n\u00fdch tuc\u00edch, a naopak zvy\u0161ovat p\u0159\u00edjem v\u00edcenenasycen\u00fdch mastn\u00fdch kyselin, v\u010detn\u011b esenci\u00e1ln\u00edch omega 3. Ty jsou stejn\u011b jako esenci\u00e1ln\u00ed omega 6 nezbytn\u00e9 pro na\u0161e zdrav\u00ed, kter\u00e9 m\u016f\u017ee \u0159epkov\u00fd olej pozitivn\u011b ovlivnit. T\u011blo si je neum\u00ed vytvo\u0159it samo, a proto je d\u016fle\u017eit\u00fd jejich dobr\u00fd zdroj. Esenci\u00e1ln\u00ed mastn\u00e9 kyseliny toti\u017e pom\u00e1haj\u00ed udr\u017eovat spr\u00e1vnou hladinu cholesterolu a sni\u017eovat riziko onemocn\u011bn\u00ed srdce a c\u00e9v. Pokud by poklesl obsah v\u00edcenenasycen\u00fdch mastn\u00fdch kyselin a zejm\u00e9na kyseliny linolenov\u00e9, \u0159epkov\u00fd olej by jako nutri\u010dn\u011b velmi hodnotn\u00e1 surovina pro potravin\u00e1\u0159sk\u00fd pr\u016fmysl p\u0159estal b\u00fdt tolik atraktivn\u00ed,\u201c okomentoval d\u016fvod ocen\u011bn\u00ed vybran\u00fdch odr\u016fd doc.
