S t\u00edmto doporu\u010den\u00edm se m\u016f\u017eeme setkat i v\u00a0n\u011bkter\u00fdch let\u00e1\u010dc\u00edch (nap\u0159. v\u00a0ordinac\u00edch l\u00e9ka\u0159\u016f), kde majon\u00e9za figuruje mezi potravinami, kter\u00e9 nejsou z\u00a0hlediska v\u00fd\u017eivy doporu\u010dov\u00e1ny ke konzumaci. Objevuj\u00ed se i \u010dl\u00e1nky na internetu, podle nich\u017e je majon\u00e9za zdrojem potenci\u00e1ln\u00edch zdravotn\u00edch probl\u00e9m\u016f. N\u011bkdy to b\u00fdv\u00e1\u00a0<a href=\"https:\/\/www.plnezdravi.cz\/majoneza-strasak-zdrave-vyzivy-proc-je-tak-nezdrava\/\">zd\u016frazn\u011bno hlavn\u011b v titulc\u00edch<\/a>, ve vlastn\u00edm \u010dl\u00e1nku u\u017e to nen\u00ed tak zl\u00e9. M\u00e9n\u011b striktn\u00ed jsou doporu\u010den\u00ed, \u017ee by konzumace majon\u00e9zy m\u011bla b\u00fdt omezov\u00e1na (nap\u0159.\u00a0<a href=\"https:\/\/www.gov.ie\/en\/publication\/70a2e4-the-food-pyramid\/\">irsk\u00e1 potravinov\u00e1 pyramida<\/a>). Na druhou stranu ve\u00a0<a href=\"https:\/\/www.dietaryguidelines.gov\/about-dietary-guidelines\/previous-editions\/2015-dietary-guidelines\">v\u00fd\u017eivov\u00fdch doporu\u010den\u00edch pro obyvatele USA z roku 2015\u00a0<\/a>byl prezentov\u00e1n jako vzorov\u00fd pokrm ku\u0159ec\u00ed sal\u00e1t se zeleninou, ovocem a o\u0159echy, pod\u00e1van\u00fd s celozrnn\u00fdm chlebem a n\u00edzkotu\u010dn\u00fdm ml\u00e9kem. Na tomto pokrmu se demonstrovala d\u016fle\u017eitost v\u0161ech potravin, kter\u00e9 organismus pot\u0159ebuje v r\u00e1mci vyv\u00e1\u017een\u00e9 stravy k zaji\u0161t\u011bn\u00ed p\u0159\u00edjmu nezbytn\u00fdch \u017eivin. Jako zdroj nenasycen\u00fdch mastn\u00fdch kyselin byla v tomto vzorov\u00e9m pokrmu pou\u017eita majon\u00e9za. Jak se v\u00a0tom m\u00e1me vyznat?\u00a0<\/p>\n\n\n\n<p><strong>Co to vlastn\u011b majon\u00e9za je?<\/strong><\/p>\n\n\n\n<p>Majon\u00e9za je relativn\u011b jednoduch\u00fd v\u00fdrobek slo\u017een\u00fd z b\u011b\u017en\u00fdch surovin. Jeho z\u00e1klad tvo\u0159\u00ed rostlinn\u00fd olej a vaje\u010dn\u00e9 \u017eloutky. Tato hust\u00e1, kr\u00e9mov\u00e1 om\u00e1\u010dka obsahuje d\u00e1le okyseluj\u00edc\u00ed slo\u017eku (nap\u0159. vinn\u00fd nebo jin\u00fd druh octu, citronovou \u0161\u0165\u00e1vu nebo kyselinu citronovou rozpu\u0161t\u011bnou ve vod\u011b). Vaje\u010dn\u00fd \u017eloutek d\u00edky p\u0159irozen\u011b p\u0159\u00edtomn\u00e9mu lecithinu spoj\u00ed vodnou a olejovou f\u00e1zi. Majon\u00e9za m\u016f\u017ee b\u00fdt dochucena ho\u0159\u010dic\u00ed a ko\u0159en\u00edm. P\u0159\u00eddatn\u00e9 l\u00e1tky, kter\u00e9 najdeme v jin\u00fdch v\u00fdrobc\u00edch pou\u017e\u00edvan\u00fdch k dochucen\u00ed pokrm\u016f, nejsou z technologick\u00e9ho hlediska bezpodm\u00edne\u010dn\u011b nutn\u00e9.<\/p>\n\n\n\n<p>K p\u0159\u00edprav\u011b dom\u00e1c\u00ed majon\u00e9zy pot\u0159ebujeme v\u00edce vaje\u010dn\u00fdch \u017eloutk\u016f, ne\u017e je obvykl\u00e9 v&nbsp;majon\u00e9ze zakoupen\u00e9 v obchodu. Majon\u00e9za v&nbsp;obchodn\u00ed s\u00edti mus\u00ed obsahovat minim\u00e1ln\u011b 2 % vaje\u010dn\u00fdch \u017eloutk\u016f. V\u00fdrazn\u011b vy\u0161\u0161\u00ed mno\u017estv\u00ed nen\u00ed pot\u0159eba k&nbsp;dosa\u017een\u00ed hladk\u00e9 stabiln\u00ed emulze, ani se v\u00fdznamn\u011bji nepod\u00edl\u00ed na zlep\u0161en\u00ed chu\u0165ov\u00e9ho vjemu.
