C\u00edlem kampan\u011b je p\u0159ipom\u00ednat, \u017ee p\u0159i v\u00fdb\u011bru potravin je d\u016fle\u017eit\u00e9 myslet i na to, zda suroviny, ze kter\u00fdch j\u00eddlo p\u0159ipravujeme, jsou \u010derstv\u00e9 a neobsahuj\u00ed ne\u017e\u00e1douc\u00ed l\u00e1tky.<\/p>\n\n\n\n<p><strong>\u010ceho si v\u0161\u00edmat u tuk\u016f z hlediska kvality a bezpe\u010dnosti?<\/strong><\/p>\n\n\n\n<p>D\u016fle\u017eit\u00e9 je dodr\u017eovat podm\u00ednky, za jak\u00fdch se maj\u00ed uchov\u00e1vat jednotliv\u00e9 v\u00fdrobky. Rozt\u00edrateln\u00e9 tuky obsahuj\u00ed vodu. Ta m\u016f\u017ee slou\u017eit jako vhodn\u00e9 prost\u0159ed\u00ed pro pomno\u017eov\u00e1n\u00ed mikroorganism\u016f. Proto se v\u00fdrobky mus\u00ed uchov\u00e1vat v chladni\u010dce. U olej\u016f je ne\u017e\u00e1douc\u00ed oxidace nenasycen\u00fdch mastn\u00fdch kyselin. Prim\u00e1rn\u00ed ochranou je uchov\u00e1vat oleje v temnu a nevystavovat je p\u0159\u00edm\u00e9mu slune\u010dn\u00edmu svitu. D\u0159\u00edve se oleje dod\u00e1valy do obchodn\u00ed s\u00edt\u011b balen\u00e9 ve smr\u0161\u0165ovac\u00ed folii, podobn\u011b jako vody. Ochrana proti sv\u011btlu byla nedostate\u010dn\u00e1. Dnes je ji\u017e standardem balen\u00ed olej\u016f do kartonu. Oleje jsou n\u00e1sledn\u011b vybaleny a\u017e v obchodech, v\u011bt\u0161inou t\u011bsn\u011b p\u0159ed vlastn\u00edm prodejem. Vyb\u00edrejte p\u0159ednostn\u011b oleje z kart\u00f3n\u016f. M\u00e1te t\u00edm z\u00e1ruku, \u017ee nebyly del\u0161\u00ed dobu vystaveny sv\u011btlu. Oleje obecn\u011b (a\u017e na v\u00fdjimky) maj\u00ed del\u0161\u00ed dobu minim\u00e1ln\u00ed trvanlivosti. Je proto d\u016fle\u017eit\u00e9, jak s nimi nakl\u00e1d\u00e1me v dom\u00e1cnosti. Ide\u00e1ln\u00ed je uchov\u00e1vat je ve sk\u0159\u00ed\u0148ce nad kuchy\u0148skou linkou. Oleje s vysok\u00fdm pod\u00edlem nenasycen\u00fdch mastn\u00fdch kyselin, jako nap\u0159. ln\u011bn\u00fd, je vhodn\u00e9 d\u00e1t i do chladni\u010dky. Pokud na druhou stranu d\u00e1me do chladni\u010dky olej olivov\u00fd, dojde obvykle k vysazov\u00e1n\u00ed pevn\u00fdch pod\u00edl\u016f. D\u016fle\u017eit\u00e9 je pou\u017e\u00edvat oleje a tuky k \u00fa\u010del\u016fm, k nim\u017e jsou p\u0159edur\u010deny. N\u011bkter\u00e9 oleje jsou vhodn\u00e9 na sma\u017een\u00ed, jin\u00e9 se naopak v\u00edce hod\u00ed do studen\u00e9 kuchyn\u011b. Z hlediska dlouhodob\u00e9ho zdrav\u00ed bychom m\u011bli dodr\u017eovat v\u00fd\u017eivov\u00e1 doporu\u010den\u00ed pro v\u00fdb\u011br olej\u016f a tuk\u016f. Podrobn\u011bji jsme se tomuto t\u00e9matu v\u011bnovali v\u00a0<a href=\"https:\/\/www.olejnadzlato.cz\/?p=1155\">\u010dl\u00e1nku na na\u0161em webu<\/a>.<\/p>\n\n\n\n<p><strong>Jak\u00e1 p\u0159\u00edpadn\u00e1 nebezpe\u010d\u00ed se skr\u00fdvaj\u00ed u tuk\u016f?<\/strong><\/p>\n\n\n\n<p>Pod\u00edvali jsme se do Syst\u00e9m\u00a0rychl\u00e9ho varov\u00e1n\u00ed\u00a0pro potraviny a\u00a0krmiva\u00a0(<a href=\"https:\/\/webgate.ec.europa.eu\/rasff-window\/screen\/search\">Rapid Alert System for Food and Feed,\u00a0RASFF<\/a>). Pro\u0161li jsme cel\u00fd ro\u010dn\u00edk 2022 a komoditu tuky a oleje. V datab\u00e1zi je na cel\u00e9m \u00fazem\u00ed Evropsk\u00e9 unie 43 z\u00e1znam\u016f t\u00fdkaj\u00edc\u00edch se potravin a 1 z\u00e1znam t\u00fdkaj\u00edc\u00ed se krmiva, \u017e\u00e1dn\u00fd z n\u00e1lez\u016f nebyl zji\u0161t\u011bn na \u00fazem\u00ed \u010cesk\u00e9 republik<strong>y.\u00a0<\/strong><\/p>\n\n\n\n<p><strong>Nej\u010dast\u011bj\u0161\u00edm probl\u00e9mem byl v\u00fdskyt procesn\u00edch kontaminant\u016f v tuc\u00edch a olej\u00edch&nbsp;<\/strong>(celkem 21 p\u0159\u00edpad\u016f),&nbsp;z toho:&nbsp;<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013&nbsp;7 p\u0159\u00edpad\u016f se t\u00fdkalo vy\u0161\u0161\u00edho obsahu 3-monochlorpropandiolu (3-MCPD),<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 6 p\u0159\u00edpad\u016f nadlimitn\u00edho v\u00fdskytu glycidolu a glycidylester\u016f,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 4 p\u0159\u00edpady nadlimitn\u00edho v\u00fdskytu miner\u00e1ln\u00edch olej\u016f (MOSH a MOAH),<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 4 p\u0159\u00edpady nadlimitn\u00edho v\u00fdskytu polyaromatick\u00fdch uhlovod\u00edk\u016f (PAH).<\/p>\n\n\n\n<p>Problematice procesn\u00edch kontaminant\u016f se budeme v\u00edce v detailu v\u011bnovat v n\u011bkter\u00e9m z dal\u0161\u00edch \u010dl\u00e1nk\u016f.<\/p>\n\n\n\n<p><strong>D\u00e1le n\u00e1sledovalo:<\/strong><\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 7 p\u0159\u00edpad\u016f v\u00fdskytu neschv\u00e1len\u00e9ho barviva Sudan I, III nebo IV v palmov\u00e9m oleji,<\/p>\n\n\n\n<p>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u2013 5 p\u0159\u00edpad\u016f p\u0159\u00edtomn\u00e9 neschv\u00e1len\u00e9 nov\u00e9 potraviny (potravina nov\u00e9ho typu) v olivov\u00e9m a\u00a0mandlov\u00e9m oleji,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 2 p\u0159\u00edpady mikrobi\u00e1ln\u00ed kontaminace,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 2 nadlimitn\u00ed v\u00fdskyty pesticidu v podzemnicov\u00e9m a km\u00ednov\u00e9m oleji,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 1 p\u0159\u00edpad vy\u0161\u0161\u00edho obsahu kyseliny erukov\u00e9 v ho\u0159\u010di\u010dn\u00e9m oleji,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 1 p\u0159\u00edpad vy\u0161\u0161\u00edho \u010d\u00edsla kyselosti v km\u00ednov\u00e9m oleji,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 1 p\u0159\u00edpad v\u00fdskytu ciz\u00edch t\u011bles (\u010dern\u00fdch \u010d\u00e1ste\u010dek) v margarinu,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013 1 p\u0159\u00edklad v\u00fdskytu lepku v margarinu, kter\u00fd nebyl deklarov\u00e1n na etiket\u011b,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013&nbsp;1 p\u0159\u00edklad fal\u0161ov\u00e1n\u00ed olivov\u00e9ho oleje,<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;\u2013&nbsp;1 p\u0159\u00edklad nespecifikovan\u00e9ho probl\u00e9mu s ryb\u00edm olejem.<\/p>\n\n\n\n<p>Z tohoto souboru vypl\u00fdv\u00e1, \u017ee komodita tuky a oleje pat\u0159\u00ed mezi bezpe\u010dn\u00e9.
