M\u016f\u017eeme se nap\u0159\u00edklad do\u010d\u00edst: \u201e<a href=\"https:\/\/www.prozeny.cz\/clanek\/zdravi-a-zivotni-styl-diety-a-hubnuti-je-zdravejsi-chleba-s-maslem-nebo-se-sadlem-83656\">Jak m\u00e1slo, tak i&nbsp;s\u00e1dlo pat\u0159\u00ed mezi rozt\u00edrateln\u00e9 tuky &#8230;<\/a>\u201c&nbsp;nebo naopak: \u201e<a href=\"https:\/\/dvojka.rozhlas.cz\/roztiratelne-tuky-uz-strasakem-nejsou-v-testu-si-vedly-dobre-obezretni-ale-meli-8365418\">Rozt\u00edrateln\u00fd tuk jako&nbsp;levn\u011bj\u0161\u00ed alternativa m\u00e1sla &#8230;<\/a>\u201c.&nbsp;Z\u00e1kladn\u00ed \u010dlen\u011bn\u00ed tuk\u016f a souvisej\u00edc\u00ed definice vych\u00e1z\u00ed z&nbsp;na\u0159\u00edzen\u00ed&nbsp;(EU) \u010d. 1308\/2013 a vyhl\u00e1\u0161ky \u010d. 397\/2016 v platn\u00e9m zn\u011bn\u00ed. Rozt\u00edrateln\u00e9 tuky jsou v\u00fdrobky na b\u00e1zi tuh\u00e9, tv\u00e1rn\u00e9 emulze, p\u0159ev\u00e1\u017en\u011b typu&nbsp;voda v&nbsp;oleji. S\u00e1dlo je 100 % tuk, tud\u00ed\u017e mezi rozt\u00edrateln\u00e9 tuky nepat\u0159\u00ed.<\/p>\n\n\n\n<p><strong>M\u00e1slo je rozt\u00edrateln\u00fd tuk<\/strong><\/p>\n\n\n\n<p>Rozt\u00edrateln\u00e9 tuky se d\u00e1le d\u011bl\u00ed na 3 z\u00e1kladn\u00ed skupiny:<\/p>\n\n\n\n<ul><li>tuky ml\u00e9\u010dn\u00e9, kde tuk ml\u00e9\u010dn\u00fd je jedin\u00fdm druhem tuku ve v\u00fdrobku;<\/li><li>tuky, kde obsah ml\u00e9\u010dn\u00e9ho tuku je do 3 %;<\/li><li>tuky sm\u011bsn\u00e9, kde obsah ml\u00e9\u010dn\u00e9ho tuku je v\u00a0rozmez\u00ed\u00a010-80\u00a0% z\u00a0celkov\u00e9ho obsahu tuku.<\/li><\/ul>\n\n\n\n<p>Rozt\u00edrateln\u00fd tuk nen\u00ed z definice levn\u011bj\u0161\u00ed alternativou m\u00e1sla, jak se uv\u00e1d\u00ed&nbsp;<a href=\"https:\/\/dvojka.rozhlas.cz\/roztiratelne-tuky-uz-strasakem-nejsou-v-testu-si-vedly-dobre-obezretni-ale-meli-8365418\">ve v\u00fd\u0161e citovan\u00e9m \u010dl\u00e1nku<\/a>, proto\u017ee m\u00e1slo je rozt\u00edrateln\u00fd tuk.<\/p>\n\n\n\n<p>V\u00fd\u0161e uveden\u00e9 skupiny se d\u00e1le \u010dlen\u00ed do podskupin podle obsahu tuku. Toto \u010dlen\u011bn\u00ed bylo zavedeno v minulosti, aby si spot\u0159ebitel mohl vyb\u00edrat v\u00fdrobky z&nbsp;\u0161ir\u0161\u00ed nab\u00eddky na trhu a v\u00fdrobky s obsahem tuku okolo 80, 60 a 40&nbsp;% m\u011bly podobn\u00e9 n\u00e1zvy, stejn\u011b jako ostatn\u00ed v\u00fdrobky s obsahem tuku v cel\u00e9m \u0161irok\u00e9m spektru mezi t\u011bmito hranicemi. Konkr\u00e9tn\u011b ozna\u010den\u00ed \u201emargarin\u201c a \u201em\u00e1slo\u201c lze pou\u017e\u00edvat jen pro v\u00fdrobky s obsahem tuku 80-90 %, p\u0159\u00edpadn\u011b 60-62 % s p\u0159\u00edvlastky t\u0159i\u010dtvrt\u011btu\u010dn\u00fd\/\u00e9 margarin\/m\u00e1slo nebo 39-41 % polotu\u010dn\u00fd\/\u00e9 margarin\/m\u00e1slo. Pro&nbsp;\u010ceskou republiku je typick\u00e9 nesolen\u00e9 m\u00e1slo s 82 % ml\u00e9\u010dn\u00e9ho tuku.&nbsp;V\u00fdrazy \u201et\u0159i\u010dtvrt\u011btu\u010dn\u00fd\u201c nebo \u201epolotu\u010dn\u00fd\u201c, je mo\u017en\u00e9 nahradit v\u00fdrazy \u201ese sn\u00ed\u017een\u00fdm obsahem tuku\u201c, p\u0159\u00edpadn\u011b \u201elight\u201c. Mimo tyto intervaly mus\u00ed b\u00fdt v\u00fdrobek ozna\u010den jako \u201erozt\u00edrateln\u00fd tuk X %\u201c, nebo \u201eml\u00e9\u010dn\u00e1 pomaz\u00e1nka X %\u201c. Ozna\u010den\u00ed \u201em\u00e1slo\u201c se jev\u00ed jako d\u016fle\u017eit\u00fd prvek pro ml\u00e9\u010dn\u00e9 tuky, proto se na trhu setk\u00e1me jen v\u00fdjime\u010dn\u011b s v\u00fdrobky spadaj\u00edc\u00edmi do kategorie ml\u00e9\u010dn\u00fdch pomaz\u00e1nek. Hlavn\u00ed a v podstat\u011b jedinou v\u00fdjimkou je speci\u00e1ln\u00ed, mezi spot\u0159ebiteli obl\u00edben\u00fd \u010desk\u00fd v\u00fdrobek \u201etradi\u010dn\u00ed pomaz\u00e1nkov\u00e9\u201c, kter\u00fd byl d\u0159\u00edve naz\u00fdv\u00e1n pomaz\u00e1nkov\u00fdm m\u00e1slem. Ozna\u010den\u00ed muselo b\u00fdt uvedeno v soulad s evropskou legislativou. Jin\u00e1 je situace u podskupiny v\u00fdrobk\u016f rozt\u00edrateln\u00fdch tuk\u016f s ml\u00e9\u010dn\u00fdm tukem do 3 %. Ozna\u010den\u00ed \u201erozt\u00edrateln\u00fd tuk X %\u201c v\u00fdrobc\u016fm zjevn\u011b nevad\u00ed, proto m\u00e1me na trhu velmi \u0161irokou nab\u00eddku v\u00fdrobk\u016f s r\u016fzn\u00fdmi obsahy tuku v t\u00e9to podskupin\u011b.&nbsp;<\/p>\n\n\n\n<p><strong>Jak se rozt\u00edrateln\u00e9 tuky vyr\u00e1b\u00ed?<\/strong><\/p>\n\n\n\n<p>Rozt\u00edrateln\u00e9 tuky \u00fadajn\u011b vyr\u00e1b\u00edme&nbsp;<a href=\"https:\/\/dvojka.rozhlas.cz\/roztiratelne-tuky-uz-strasakem-nejsou-v-testu-si-vedly-dobre-obezretni-ale-meli-8365418\">z vody, oleje a soli<\/a>.&nbsp;To je hodn\u011b zkratkovit\u00e9 tvrzen\u00ed. M\u00e1slo jako\u017eto rozt\u00edrateln\u00fd tuk se vyr\u00e1b\u00ed ze smetany. P\u0159i v\u00fdrob\u011b rozt\u00edrateln\u00fdch tuk\u016f je d\u016fle\u017eitou slo\u017ekou tuk pevn\u00e9ho skupenstv\u00ed. U m\u00e1sla je to samotn\u00fd tuk ml\u00e9\u010dn\u00fd, ostatn\u00ed rozt\u00edrateln\u00e9 tuky nelze vyrobit jen z oleje. Je t\u0159eba pou\u017e\u00edt krom\u011b kapaln\u00e9ho oleje n\u011bjak\u00fd vhodn\u011b zvolen\u00fd tuk, aby v\u00fdrobek dr\u017eel pohromad\u011b. V\u00fdb\u011br oleje a jeho pom\u011br v\u016f\u010di tuku a jeho charakteristiky v\u00fdrazn\u011b a c\u00edlen\u011b ovliv\u0148uje funk\u010dn\u00ed a v\u00fd\u017eivov\u00e9 vlastnosti v\u00fdrobk\u016f.&nbsp;<\/p>\n\n\n\n<p>Rovn\u011b\u017e neplat\u00ed tvrzen\u00ed, \u017ee se rozt\u00edrateln\u00e9 tuky v dne\u0161n\u00ed dob\u011b&nbsp;<a href=\"http:\/\/www.dtest.cz\/clanek-4282\/jak-vybrat-roztiratelny-tuk\">vyr\u00e1b\u011bj\u00ed tzv. interesterifikac\u00ed, kter\u00e1 nahradila hydrogenaci<\/a>. Ani hydrogenace v minulosti, ani interesterifikace v dne\u0161n\u00ed dob\u011b nebyla \u010di nen\u00ed sou\u010d\u00e1st\u00ed v\u00fdrobn\u00ed technologie rozt\u00edrateln\u00fdch tuk\u016f. T\u011bmito procesy se vyr\u00e1b\u011bl nebo vyr\u00e1b\u00ed jen pevn\u00fd tuk po\u017eadovan\u00fdch vlastnost\u00ed, kter\u00fd byl nebo je n\u00e1sledn\u011b pou\u017eit ve v\u00fdrob\u011b rozt\u00edrateln\u00fdch tuk\u016f jako jedna ze slo\u017eek. Jsou i jin\u00e9 mo\u017enosti technologick\u00fdch \u00faprav tuk\u016f, ne\u017e nab\u00edz\u00ed interesterifikace. V dne\u0161n\u00ed dob\u011b jsou pevn\u00e9 tuky vyr\u00e1b\u011bny podle po\u017eadavk\u016f u\u017eivatel\u016f a specifikac\u00ed ve v\u011bt\u0161in\u011b p\u0159\u00edpad\u016f v jin\u00fdch, odd\u011blen\u00fdch z\u00e1vodech a producent\u016fm rozt\u00edrateln\u00fdch tuk\u016f jsou dod\u00e1v\u00e1ny v r\u00e1mci obchodn\u00edch vztah\u016f jako v\u0161echny ostatn\u00ed suroviny.<\/p>\n\n\n\n<p><strong>Pozor na cenu ve vztahu ke slo\u017een\u00ed v\u00fdrobk\u016f<\/strong><\/p>\n\n\n\n<p>M\u00e1slo jako v\u00fdrobek \u00fazce definovan\u00e9ho slo\u017een\u00ed b\u00fdv\u00e1 \u010dasto pou\u017e\u00edv\u00e1n jako ukazatel zm\u011bn cen potravin\u00e1\u0159sk\u00fdch v\u00fdrobk\u016f. V posledn\u00ed dob\u011b ceny potravin rostou a m\u00e1slo je jedna z potravin, na n\u00ed\u017e se zm\u011bny cen demonstruj\u00ed. Spot\u0159ebitel \u010dasto srovn\u00e1v\u00e1 ceny m\u00e1sla a jin\u00fdch rozt\u00edrateln\u00fdch tuk\u016f. M\u011bl by si p\u0159i porovn\u00e1v\u00e1n\u00ed cen d\u00e1vat pozor na obsah tuku u v\u00fdrobk\u016f, kter\u00fd je jedn\u00edm z cenotvorn\u00fdch prvk\u016f. M\u00e1slo \u010dasto m\u00edv\u00e1 vy\u0161\u0161\u00ed obsah tuku ne\u017e jin\u00e9 rozt\u00edrateln\u00e9 tuky na pe\u010den\u00ed.
