St\u0159edomo\u0159sk\u00e9 stravy, kter\u00e1 b\u00fdv\u00e1 d\u00e1v\u00e1na za vzor v\u00fd\u017eivov\u00fdch doporu\u010den\u00ed a soust\u0159ed\u00ed se na v\u00fd\u010det vhodn\u00fdch potravin sp\u00ed\u0161e ne\u017e na doporu\u010denou konzumaci jednotliv\u00fdch \u017eivin. St\u0159edomo\u0159sk\u00e1 strava v\u0161ak nen\u00ed jen o olivov\u00e9m oleji. Vysok\u00fd pod\u00edl ve strav\u011b m\u00e1 \u010derstv\u00e9 ovoce a zelenina, obiloviny, ryby a lu\u0161t\u011bniny, na druhou stranu je omezen\u00fd p\u0159\u00edjem masa. Olivov\u00fd olej je konzumov\u00e1n hlavn\u011b jako za studena lisovan\u00fd. M\u00e1 specifick\u00e9 v\u00fdrazn\u00e9 chu\u0165ov\u00e9 vlastnosti, kter\u00e9 ne v\u017edy vyhovuj\u00ed p\u0159i p\u0159\u00edprav\u011b n\u011bkter\u00fdch druh\u016f pokrm\u016f. Proto n\u011bkter\u00e9 st\u00e1ty ve sv\u00fdch doporu\u010den\u00edch hledaj\u00ed alternativu k olivov\u00e9mu oleji.<\/p>\n\n\n\n<p><strong>V\u00fd\u017eivov\u00e1 doporu\u010den\u00ed pro Skandin\u00e1vii<\/strong><\/p>\n\n\n\n<p>V roce 2012 byla publikov\u00e1na&nbsp;<a href=\"https:\/\/norden.diva-portal.org\/smash\/get\/diva2:704251\/FULLTEXT01.pdf\">v\u00fd\u017eivov\u00e1 doporu\u010den\u00ed pro Skandin\u00e1vii<\/a>. V popul\u00e1rn\u00edch \u010dl\u00e1nc\u00edch b\u00fdvaj\u00ed tato doporu\u010den\u00ed naz\u00fdv\u00e1na jako seversk\u00e1 strava nebo strava Viking\u016f. D\u016fle\u017eitou sou\u010d\u00e1st\u00ed doporu\u010dovan\u00e9 skladby stravy zde hraje mimo jin\u00e9 \u0159epkov\u00fd olej.<\/p>\n\n\n\n<p><strong>Obl\u00edbenost olej\u016f<\/strong><\/p>\n\n\n\n<p>V \u010cesk\u00e9 republice je u spot\u0159ebitel\u016f v\u00edce obl\u00edben olivov\u00fd olej ne\u017e olej \u0159epkov\u00fd. U na\u0161ich severn\u00edch soused\u016f je tomu naopak, jak vypl\u00fdv\u00e1 z obr\u00e1zku. Jako u v\u0161ech olej\u016f je zde v\u00fdrazn\u00e1 p\u0159evaha nenasycen\u00fdch mastn\u00fdch kyselin. U obou olej\u016f je dominantn\u00ed kyselinou mononenasycen\u00e1 kyselina olejov\u00e1. Na druhou stranu \u0159epkov\u00fd olej obsahuje o polovinu m\u00e9n\u011b nasycen\u00fdch mastn\u00fdch kyselin. M\u00e1 i v\u00edce polynenasycen\u00fdch mastn\u00fdch kyselin a v \u0159epkov\u00e9m oleji jsou zastoupeny jak omega 6, tak i omega 3 mastn\u00e9 kyseliny. Omega 3 mastn\u00e9 kyseliny olivov\u00e9mu oleji chyb\u00ed. Na trhu p\u0159eva\u017euje olivov\u00fd olej za studena lisovan\u00fd, \u0159epkov\u00fd olej je prod\u00e1v\u00e1n ve v\u011bt\u0161in\u011b p\u0159\u00edpad\u016f jako rafinovan\u00fd.&nbsp;<\/p>\n\n\n\n<p><strong>Jak si stoj\u00ed \u0159epkov\u00fd olej oproti olivov\u00e9mu v zdravotn\u00edch \u00fa\u010dinc\u00edch?<\/strong><\/p>\n\n\n\n<p>Olivov\u00fd olej je obzvl\u00e1\u0161\u0165 zn\u00e1m\u00fd vysok\u00fdm obsahem antioxidant\u016f. Benefit \u0159epkov\u00e9ho oleje spo\u010d\u00edv\u00e1 ve slo\u017een\u00ed mastn\u00fdch kyselin. V \u010dervenci 2022 byla&nbsp;<a href=\"https:\/\/www.tandfonline.com\/doi\/abs\/10.1080\/10408398.2022.2100314\">publikov\u00e1na metaanal\u00fdza ze 13 studi\u00ed<\/a>, kter\u00e1 porovn\u00e1vala \u00fa\u010dinky konzumace \u0159epkov\u00e9ho a olivov\u00e9ho oleje na hladinu krevn\u00edch lipid\u016f. Konzumace \u0159epkov\u00e9ho oleje ovliv\u0148ovala l\u00e9pe hladinu \u201e\u0161patn\u00e9ho\u201c LDL-cholesterolu, celkov\u00e9ho cholesterolu a pom\u011br LDL-\/HDL-cholesterolu ve srovn\u00e1n\u00ed s olivov\u00fdm olejem.<\/p>\n\n\n\n<p><strong>Konzumace olej\u016f je obecn\u011b prosp\u011b\u0161n\u011bj\u0161\u00ed ne\u017e konzumace tuk\u016f<\/strong><\/p>\n\n\n\n<p>Oleje jsou za norm\u00e1ln\u00ed teploty kapaln\u00e9, tuky maj\u00ed pevn\u00e9 skupenstv\u00ed. Tato vlastnost je d\u00e1na pod\u00edlem nasycen\u00fdch mastn\u00fdch kyselin v tuc\u00edch nebo olej\u00edch, kter\u00fd je u tuk\u016f vy\u0161\u0161\u00ed. V roce 2021 byla&nbsp;<a href=\"https:\/\/bmcmedicine.biomedcentral.com\/articles\/10.1186\/s12916-021-01961-2\">publikov\u00e1na studie<\/a>, kter\u00e1 prospektivn\u011b sledovala 521 120 \u00fa\u010dastn\u00edk\u016f ve v\u011bku 50-71 let. \u00da\u010dastn\u00edci studie vypl\u0148ovali validovan\u00fd frekven\u010dn\u00ed dotazn\u00edk slo\u017een\u00ed stravy, na z\u00e1klad\u011b n\u011bho\u017e byla ur\u010dov\u00e1na individu\u00e1ln\u00ed spot\u0159eba olej\u016f\/tuk\u016f. B\u011bhem 16 let sledov\u00e1n\u00ed \u00fa\u010dastn\u00edk\u016f bylo zdokumentov\u00e1no 129 328 p\u0159\u00edpad\u016f \u00famrt\u00ed. \u00damrt\u00ed byla d\u00e1v\u00e1na do souvislosti s konzumovan\u00fdmi tuky. Studie dosp\u011bla k z\u00e1v\u011bru, \u017ee konzumace m\u00e1sla a margarin\u016f byla spojena s vy\u0161\u0161\u00ed celkovou a kardiovaskul\u00e1rn\u00ed \u00famrtnost\u00ed. Nahrazen\u00ed m\u00e1sla a margarinu \u0159epkov\u00fdm, kuku\u0159i\u010dn\u00fdm nebo olivov\u00fdm olejem vedlo ke sn\u00ed\u017een\u00ed celkov\u00e9 a kardiovaskul\u00e1rn\u00ed mortality.&nbsp;Zji\u0161t\u011bn\u00ed jsou potvrzen\u00edm&nbsp;<a href=\"https:\/\/knowledge4policy.ec.europa.eu\/health-promotion-knowledge-gateway\/dietary-fats-table-4_en\">v\u00fd\u017eivov\u00fdch doporu\u010den\u00ed<\/a>, kter\u00e1 vid\u00ed jako jedno z \u00fa\u010dinn\u00fdch opat\u0159en\u00ed z hlediska kardiovaskul\u00e1rn\u00ed prevence nahrazen\u00ed nasycen\u00fdch mastn\u00fdch kyselin ve strav\u011b mastn\u00fdmi kyselinami polynenasycen\u00fdmi.&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Olivov\u00fd olej je ikonou tzv.
