Spot\u0159ebitelsk\u00e9 pr\u016fzkumy ukazuj\u00ed, \u017ee se b\u011b\u017en\u00fd spot\u0159ebitel nedok\u00e1\u017ee v t\u011bchto \u010d\u00edslech dob\u0159e zorientovat. Slo\u017een\u00ed potravin, energetick\u00e1 hodnota a obsah kritick\u00fdch \u017eivin hraj\u00ed kl\u00ed\u010dovou roli p\u0159i v\u00fdb\u011bru potravin z pohledu vlivu na zdrav\u00ed. Hledaj\u00ed se proto cesty, jak spot\u0159ebitel\u016fm l\u00e9pe usnadnit v\u00fdb\u011br potravin. \u0158e\u0161en\u00ed mohou p\u0159in\u00e9st syst\u00e9my zna\u010den\u00ed na p\u0159edn\u00ed stran\u011b obalu \u2013 front of pack (nutrition) labelling (FOPNL\/FOLP). Na tom se shoduj\u00ed odborn\u00edci na v\u00fd\u017eivu a tyto iniciativy&nbsp;<a href=\"https:\/\/apps.who.int\/nutrition\/publications\/policies\/guidingprinciples-labelling-promoting-healthydiet.pdf?ua=1\">podporuje i Sv\u011btov\u00e1 zdravotnick\u00e1 organizace<\/a>. P\u0159\u00edklad\u016f m\u00e1me celou \u0159adu.<\/p>\n\n\n\n<p><strong>Zjednodu\u0161uj\u00edc\u00ed loga<\/strong><\/p>\n\n\n\n<p>Na trhu existuje nespo\u010det syst\u00e9m\u016f, kter\u00e9 vyjad\u0159uj\u00ed v\u00fd\u017eivovou kvalitu potravin prost\u0159ednictv\u00edm jednoduch\u00e9ho loga. Logo m\u016f\u017ee vyjad\u0159ovat, \u017ee ur\u010dit\u00e1 potravina m\u00e1 lep\u0161\u00ed v\u00fd\u017eivovou hodnotu odpov\u00eddaj\u00edc\u00ed v\u00fd\u017eivov\u00fdm doporu\u010den\u00edm ne\u017e zbytek potravin na trhu, tzv. pozitivn\u00ed logo. P\u0159\u00edkladem m\u016f\u017ee b\u00fdt logo V\u00edm, co j\u00edm pou\u017e\u00edvan\u00e9 v \u010cesk\u00e9 republice (viz obr. vlevo). Na druhou stranu m\u016f\u017ee m\u00edt logo varovn\u00fd v\u00fdznam, poukazuj\u00edc\u00ed na vysok\u00fd obsah n\u011bkter\u00e9 \u017eiviny (nap\u0159. nasycen\u00e9 mastn\u00e9 kyseliny), tzv. negativn\u00ed logo (viz obr. vpravo) V posledn\u00ed dob\u011b se za\u010daly pou\u017e\u00edvat syst\u00e9my, kter\u00e9 \u0159ad\u00ed potraviny do v\u00edce kategori\u00ed podle obsahu rizikov\u00fdch a pozitivn\u00edch \u017eivin. P\u0159\u00edkladem m\u016f\u017ee b\u00fdt syst\u00e9m Nutri-Score pracuj\u00edc\u00ed s 5 kategoriemi A a\u017e E, reprezentovan\u00fdmi tmav\u011b zelenou a\u017e \u010dervenou barvou (viz obr. uprost\u0159ed).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" loading=\"lazy\" width=\"805\" height=\"243\" src=\"https:\/\/www.olejnadzlato.cz\/wp-content\/uploads\/2022\/08\/loga.png\" alt=\"\" class=\"wp-image-1062\" srcset=\"https:\/\/www.olejnadzlato.cz\/wp-content\/uploads\/2022\/08\/loga.png 805w, https:\/\/www.olejnadzlato.cz\/wp-content\/uploads\/2022\/08\/loga-480x145.png 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) 805px, 100vw\" \/><\/figure>\n\n\n\n<p>V\u0161echny syst\u00e9my pracuj\u00ed s v\u00fd\u017eivov\u00fdmi profily jednotliv\u00fdch potravin. Nastavuj\u00ed krit\u00e9ria, p\u0159\u00edpadn\u011b v\u00fdpo\u010dtov\u00e9 algoritmy, podle nich\u017e je p\u0159id\u011blov\u00e1no pozitivn\u00ed nebo negativn\u00ed logo, \u010di je potravina za\u0159azena do n\u011bkter\u00e9 z&nbsp;kategori\u00ed.<\/p>\n\n\n\n<p><strong>Syst\u00e9m Nutri-Score<\/strong><\/p>\n\n\n\n<p>Za\u0159azen\u00ed jednotliv\u00fdch potravin do 5 kategori\u00ed vych\u00e1z\u00ed z n\u00e1vrhu anglick\u00e9 Food Standards Agency, kter\u00e1 sestavila v\u00fd\u017eivov\u00fd profil&nbsp;potravin a n\u00e1poj\u016f na z\u00e1klad\u011b obsahu \u017eivin ve 100 g p\u0159\u00edslu\u0161n\u00e9ho produktu. Na my\u0161lenku anglick\u00e9 Food Standards Agency nav\u00e1zal francouzsk\u00fd Conseil sup\u00e9rieur d&#8217;hygi\u00e8ne publique a podle navr\u017een\u00e9ho algoritmu vypo\u010d\u00edtal profil potravin, kter\u00e9 byly dostupn\u00e9 v lok\u00e1ln\u00ed datab\u00e1zi. Uk\u00e1zalo se, \u017ee v\u00fdsledky pro n\u011bkter\u00e9 druhy potravin jsou zcela zcestn\u00e9. Proto byly krom\u011b z\u00e1kladn\u00edho profilu stanoveny specifick\u00e9 profily pro skupinu n\u00e1poj\u016f, tuk\u016f a s\u00fdr\u016f.<\/p>\n\n\n\n<p>Nicm\u00e9n\u011b i takto upraven\u00fd syst\u00e9m m\u00e1 \u0159adu nedostatk\u016f. Ani nov\u011b sestaven\u00e9 specifick\u00e9 profily pro tuky a s\u00fdry nekoresponduj\u00ed s v\u00fd\u017eivov\u00fdmi doporu\u010den\u00edmi. Doch\u00e1z\u00ed \u010dasto k paradoxn\u00ed klasifikaci n\u011bkter\u00fdch potravin. Houskov\u00fd knedl\u00edk a b\u00edl\u00e1 loupan\u00e1 r\u00fd\u017ee spad\u00e1 do kategorie A nejzdrav\u011bj\u0161\u00edch potravin, zat\u00edmco olivov\u00fd olej \u2013 ikona st\u0159edomo\u0159sk\u00e9 diety \u2013 je za\u0159azen do kategorie D. \u0158epkov\u00fd olej, kter\u00fd m\u00e1 podle odborn\u00edk\u016f na v\u00fd\u017eivu mezi jedl\u00fdmi oleji jedno z&nbsp;nejlep\u0161\u00edch slo\u017een\u00ed mastn\u00fdch kyselin, spad\u00e1 do kategorie C.<\/p>\n\n\n\n<p><strong>Anal\u00fdzy syst\u00e9mu Nutri-Score<\/strong><\/p>\n\n\n\n<p>Syst\u00e9m Nutri-Score byl podroben podrobn\u00e9 anal\u00fdze&nbsp;odbornou skupinou p\u0159i \u010cesk\u00e9 technologick\u00e9 platform\u011b pro potraviny&nbsp;a v\u00fdsledky jsou publikov\u00e1ny na webu reformulace.cz v&nbsp;<a href=\"http:\/\/reformulace.cz\/images\/A4_CZ_Nutriscore.pdf\">\u010desk\u00e9<\/a>&nbsp;a&nbsp;<a href=\"http:\/\/reformulace.cz\/images\/A4_AJ_Nutriscore.pdf\">anglick\u00e9<\/a>&nbsp;verzi. \u010cesk\u00e1 odborn\u00e1 skupina do\u0161la k z\u00e1v\u011bru, \u017ee syst\u00e9m vy\u017eaduje \u0159adu z\u00e1sadn\u00edch zm\u011bn. K&nbsp;<a href=\"https:\/\/www.foodnavigator.com\/Article\/2022\/08\/03\/nutri-score-2.0-algorithm-update-recommended-by-european-scientific-committee\">podobn\u00e9mu z\u00e1v\u011bru<\/a>&nbsp;nakonec dosp\u011bli i samotn\u00ed auto\u0159i syst\u00e9mu, jak informoval v&nbsp;srpnu 2022 web foodnavigator.com. Vznikl evropsk\u00fd v\u011bdeck\u00fd v\u00fdbor, kter\u00fd si dal za c\u00edl modifikovat algoritmus pro za\u0159azov\u00e1n\u00ed v\u00fdrobk\u016f do jednotliv\u00fdch kategori\u00ed. V&nbsp;\u010dl\u00e1nku je mimo jin\u00e9 p\u0159\u00edslib \u00fapravy v\u00fdpo\u010dtu pro tuky, kter\u00e9 by oleje s&nbsp;p\u0159\u00edzniv\u00fdm slo\u017een\u00edm mastn\u00fdch kyselin posunuly do ni\u017e\u0161\u00edch kategori\u00ed.<\/p>\n\n\n\n<p><strong>Algoritmus \u010di krit\u00e9ria<\/strong><\/p>\n\n\n\n<p>Zaj\u00edmavou my\u0161lenku do pou\u017e\u00edv\u00e1n\u00ed syst\u00e9mu 5 kategori\u00ed pro jednotliv\u00e9 potraviny p\u0159inesl&nbsp;<a href=\"https:\/\/www.mdpi.com\/2072-6643\/13\/12\/4509\">odborn\u00fd \u010dl\u00e1nek<\/a>&nbsp;publikovan\u00fd koncem roku 2021 v \u010dasopise Nutrients. M\u00edsto ur\u010dit\u00e9ho algoritmu po\u010d\u00edtaj\u00edc\u00edho kladn\u00e9 a z\u00e1porn\u00e9 body jsou pro jednotliv\u00e9 skupiny potravin stanovena p\u011btistup\u0148ov\u00e1 krit\u00e9ria (4 hladiny limit\u016f). Tento p\u0159\u00edstup je mnohem flexibiln\u011bj\u0161\u00ed a p\u0159i spr\u00e1vn\u00e9m nastaven\u00ed krit\u00e9ri\u00ed v podstat\u011b vylu\u010duje p\u0159ehmaty sou\u010dasn\u00e9ho syst\u00e9mu Nutri-Score, kdy jsou tuky a oleje za\u0159azeny mezi potraviny kategorie C a\u017e E.<\/p>\n\n\n\n<p>Pro oleje a tuky (v\u010detn\u011b rozt\u00edrateln\u00fdch) jsou navr\u017eena tato krit\u00e9ria:<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td><a><\/a>&nbsp;<\/td><td><a><\/a>Obsah \u017eiviny v&nbsp;g\/100 g<a><\/a><\/td><\/tr><tr><td><a><\/a>Hladina<a><\/a><\/td><td><a><\/a>SAFA&nbsp;<a><\/a><\/td><td><a><\/a><em>i<\/em>TFA<a><\/a><\/td><td><a><\/a>sod\u00edk<a><\/a><\/td><\/tr><tr><td><a><\/a>T1<a><\/a><\/td><td><a><\/a>16<a><\/a><\/td><td><a><\/a>0,5<a><\/a><\/td><td><a><\/a>0,1<a><\/a><\/td><\/tr><tr><td><a><\/a>T2<a><\/a><\/td><td><a><\/a>30<a><\/a><\/td><td><a><\/a>0,5<a><\/a><\/td><td><a><\/a>0,35<a><\/a><\/td><\/tr><tr><td><a><\/a>T3<a><\/a><\/td><td><a><\/a>36<a><\/a><\/td><td><a><\/a>0,5<a><\/a><\/td><td><a><\/a>0,52<a><\/a><\/td><\/tr><tr><td><a><\/a>T4<a><\/a><\/td><td><a><\/a>55<a><\/a><\/td><td><a><\/a>0,5<a><\/a><\/td><td><a><\/a>0,75<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p>SAFA = nasycen\u00e9 mastn\u00e9 kyseliny,&nbsp;<em>i<\/em>TFA transmastn\u00e9 kyseliny vznikaj\u00edc\u00ed v&nbsp;pr\u016fmyslov\u00fdch technologi\u00edch<\/p>\n\n\n\n<p>Produkty v&nbsp;kategorii A mus\u00ed m\u00edt obsah v\u0161ech \u017eivin men\u0161\u00ed nebo roven ne\u017e T1. Produkty kategorie B mus\u00ed m\u00edt hodnoty v\u011bt\u0161\u00ed ne\u017e T1 a men\u0161\u00ed nebo rovno T2, atd.<\/p>\n\n\n\n<p>Podle t\u00e9to klasifikace oleje s&nbsp;n\u00edzk\u00fdm obsahem nasycen\u00fdch mastn\u00fdch kyselin pat\u0159\u00ed do kategorie A, co\u017e je mimo jin\u00e9 v&nbsp;souladu s&nbsp;v\u00fd\u017eivov\u00fdmi doporu\u010den\u00edmi WHO. Krit\u00e9rium pro&nbsp;<em>i<\/em>TFA se v\u0161ak zd\u00e1 b\u00fdt p\u0159\u00edli\u0161 p\u0159\u00edsn\u00e9. Nikdo nezpochyb\u0148uje negativn\u00ed dopad vy\u0161\u0161\u00ed konzumace&nbsp;<em>i<\/em>TFA na zdrav\u00ed. Pr\u00e1v\u011b z&nbsp;t\u011bchto d\u016fvod\u016f stanovila Evropsk\u00e1 komise prost\u0159ednictv\u00edm na\u0159\u00edzen\u00ed&nbsp;(EU) \u010d. 2019\/649 limit pro&nbsp;<em>i<\/em>TFA na&nbsp;2&nbsp;g\/100&nbsp;g tuku. To je hodnota 4kr\u00e1t vy\u0161\u0161\u00ed ne\u017e limit uva\u017eovan\u00fd v&nbsp;odborn\u00e9m \u010dl\u00e1nku. S&nbsp;limitn\u00ed hodnotou pro&nbsp;<em>i<\/em>TFA&nbsp;2&nbsp;g\/100&nbsp;g tuku pracuje i&nbsp;<a href=\"https:\/\/www.who.int\/news\/item\/17-11-2020-who-announces-certification-programme-for-trans-fat-elimination\">Sv\u011btov\u00e1 zdravotnick\u00e1 organizace<\/a>.<\/p>\n\n\n\n<p><strong>P\u0159esah kategori\u00ed i do jin\u00fdch oblast\u00ed vy\u017eaduj\u00edc\u00edch regulaci<\/strong><\/p>\n\n\n\n<p>Revolu\u010dn\u00ed je i my\u0161lenka propojit pou\u017e\u00edv\u00e1n\u00ed kategorizace potravin do syst\u00e9mu \u0161koln\u00edho stravov\u00e1n\u00ed a prodeje potravin ve \u0161koln\u00edch automatech, co\u017e v \u010cesk\u00e9 republice upravuje tzv.&nbsp;<a href=\"https:\/\/www.zakonyprolidi.cz\/cs\/2018-160\">pamlskov\u00e1 vyhl\u00e1\u0161ka<\/a>, kter\u00e1 vznikala pon\u011bkud komplikovan\u00fdm zp\u016fsobem. Potraviny z&nbsp;kategori\u00ed C a\u017e E by m\u011bly b\u00fdt ze \u0161kol a\u017e na v\u00fdjimky vylou\u010deny. Podobn\u011b by nem\u011blo b\u00fdt povoleno obohacov\u00e1n\u00ed potravin v&nbsp;kategori\u00edch C a\u017e E o vitam\u00edny a miner\u00e1ln\u00ed l\u00e1tky, stejn\u011b jako by nebylo povoleno pou\u017e\u00edvat v\u00fd\u017eivov\u00e1 a zdravotn\u00ed tvrzen\u00ed u t\u011bchto kategori\u00ed potravin.<\/p>\n\n\n\n<p><strong>Co p\u0159inese konec roku 2022<\/strong><\/p>\n\n\n\n<p>Evropsk\u00e1 komise si dala za c\u00edl p\u0159edstavit legislativn\u00ed n\u00e1vrh jednotn\u00e9ho zna\u010den\u00ed na p\u0159edn\u00ed stran\u011b potravin ke konci roku 2022. Mus\u00edme si po\u010dkat na v\u00fdsledek.
